Ingredients
- 1 tsp instant yeast
- 240 ml liquid honey, dipping allowance
- 480 ml initial vegetable frying oil
- 240 ml all-purpose wheat flour, volume measure
- 1 tsp sugar
- 1 tbsp cornstarch

Instructions
Measure and prepare

Prepare the components
Cover and let rise in a suitable warm place, beginning checks around 45 minutes until expanded as described. This is a first check, not exactly 45 minutes regardless of conditions. Gently deflate large bubbles before portioning.

Build the base
Reserve 15 ml (1 tbsp) separate spoon oil. Heat 480 ml initial frying oil to monitored 160°C in a suitable deep dry vessel, adding conditional oil only for safe depth. Never fill above halfway.
Never fill above halfway.
Combine carefully
Lightly grease a portioning spoon from the reserved oil and use a second clean spoon or suitable depositor to release small drops; do not reach over hot oil with fingers. Fry uncrowded batches at 160°C, turning with utensils and beginning checks around 3 minutes to a pale first-stage shell.

Cook and check
Lift onto a dry rack/tray for a short pause of about 10 minutes. The pale stage is not ready to eat or freeze. Complete both frying phases in one manageable session without hours of partly cooked batch holding.

Finish the cooking
Raise monitored oil to 180°C and fry again, beginning checks after 2 minutes. Continue until centres are completely cooked without wet/raw flour-starch paste, not just dark golden outside. Fresh first-stage drops need 160°C again; manage temperatures safely and never cool oil with water or ice.

Check before serving
Drain before the separate 240 ml cool liquid honey dip, checking around 1 minute, then lift with clean utensils. For 8 servings use 960 ml flour, 720 ml water, 1920 ml initial frying oil, 60 ml spoon oil and 960 ml honey. Half spoon oil is 7.5 ml. Not all oil or honey is necessarily consumed.

Serve and store
Serve in 2 portions once safe to handle, without a fixed piece-count promise. Honey is unsuitable under 12 months. Refrigerate in shallow portions within 1 hour at ≤4°C and use within 2 days.

Tips
- Instructions describe the original 2-serving batch. Ingredient controls scale the list to 1 or 8 servings: exactly half or fourfold. One cup is 240 ml, one tbsp 15 ml and one tsp 5 ml. Dry volumes are not gram weights. Use equivalent vessels and manageable batches; times are first checks, not linear scaling rules.
Common mistakes
- Do not add unlisted ingredients or rely on fixed times and surface browning alone.
Substitutions
- Use the stated source states and alternatives; check product directions and allergens.
Storage
Refrigerate promptly within 1 hour in shallow portions at ≤4°C. Use within 2 days from preparation, including cooling. These are conservative household limits, not a validated shelf life.
Reheating
Reheat leftovers at most once to 74°C throughout, then serve immediately. Keep unused portions refrigerated.
