  1. Heat the grill and prepare the tray

    Set the oven grill to high, about 230°C if it has a temperature setting, and place a rack about 15 cm below the element. Line a baking sheet with foil. Keep the grill area clear and use oven gloves because the tray and element become extremely hot.

  2. Grate and measure the topping

    Coarsely grate 250 g mature cheddar so it melts evenly. Measure 1 tablespoon mustard, 100 ml beer, 20 g butter, 15 g flour, 1 tablespoon Worcestershire sauce and 1/4 teaspoon black pepper. Check labels: this dish contains milk, gluten and mustard, and Worcestershire sauce may contain anchovy. Beer may contain alcohol and gluten; use alcohol-free gluten-free beer or milk when required.

  3. Toast the bread

    Lay 4 thick bread slices, about 80 g each, on the prepared tray. Grill for 1–2 minutes per side until lightly toasted and dry on the surface, watching continuously. Remove the tray with oven gloves and leave the grill on.

  4. Cook the cheese sauce and grill

    Start the preserved 22-minute overall cooking-stage timer when the butter goes into the saucepan; it is an outer workflow reminder, not grill exposure time. Melt the butter over medium heat, whisk in the flour and cook for 1 minute. Add the beer gradually while whisking, then simmer for 2–3 minutes until smooth and thick. Stir in mustard, Worcestershire sauce and pepper. Reduce to low heat, add the cheddar in three additions and stir just until smooth; do not boil. Spread over the toast to the edges and grill for 2–4 minutes until bubbling with deep golden spots. Remove as soon as this cue is reached, even if the timer has not ended.

  5. Rest briefly and serve

    Let the rarebit stand for 1 minute so the bubbling cheese settles, then transfer each slice to a plate with a wide spatula. Serve immediately while the toast is crisp and the topping is molten, warning diners that the cheese is very hot.
