Preparation: 20 min · Cooking: 5 min · Total: 25 min · 2 servings
Ingredients
- 150 g PREPARED ready-to-shape pumpkin/fine-bulgur kibbeh dough, suitable for frying
- 100 g Fully COOKED safely chilled RTE onion/chickpea/sumac filling
- 600 ml High-heat vegetable oil, operating frying allowance NOT consumed amount
Instructions
Verify prepared components
Use EXACTLY 150 g prepared ready-to-shape pumpkin/fine-bulgur dough and 100 g fully cooked cold RTE onion/chickpea/sumac filling. Check compatible frying directions and all declared ingredients/allergens. An unspecified bowl of purée/soaked grain is not this dough; no invented scratch quantities or extra flour/oil/spices.

Prepare a safe oil bath
BEFORE heating, put the 600 ml operating oil in a deep heavy pan about 16 cm internal diameter; verify about 2.5–3 cm cold oil depth and never over one-third full, allowing displacement. Half uses 300 ml in a suitable pan around 12 cm; fourfold 2400 ml allowance uses base-size baths/batches, NEVER all in a base pot. Follow stricter equipment limits.

Divide actual dough and filling
Keep components at 4°C or colder until working. Divide dough into six equal 25 g portions and filling into six equal portions, about 16.67 g EACH, not one teaspoon. Half yields 3 pieces; fourfold 24 with the same per-piece amounts.

Shape and seal completely
With clean hands, open each portion gently, put in its allocated filling and close with an intact thin shell; keep raw dough untasted and cold while shaping. If the chosen dough cannot enclose its filling without tearing, stop and reconcile it rather than add hidden binder or force a universal shape.

Heat with a thermometer
Dry tools and shaped exteriors before contact with oil; never add water to hot oil. Heat bath to 180°C only if compatible with oil/component/equipment directions. Lower a small batch carefully with a suitable long-handled slotted utensil; do not crowd or leave hot oil unattended.

Fry and check the centre
First check from 5 minutes, turning carefully as needed if not fully submerged. Cook shell and any flour-containing inner surfaces fully; verify reheated filling centres reach the selected 74°C. Open a sample before serving the batch. Dark colour or a timer alone is insufficient; follow stricter component directions.

Drain and handle safely
Lift with a dry slotted utensil and drain safely on suitable paper/rack away from flame. Allow a safe handling/eating temperature. This is the approved FRIED prepared-component version, not the former oven-baked spinach/mushroom/walnut recipe, and oil allowance is not a consumed-fat claim.

Refrigerate promptly
Refrigerate shallow portions promptly within 2 hours, or 1 hour above 32°C; store at 4°C or colder at most 2 days or earlier dough/filling deadline. Reheat once to 74°C throughout. No scratch-knead/oven timer is invented for prepared ingredients; actual product instructions still control.

Tips
- Step quantities describe 2 catalogue shares, not guaranteed dietary portions. Scale EVERY numeric input, process-water allowance and garnish by 0.5 for 1 share or 4 for 8 shares. Times, temperatures, thickness, oil depth and pan sizes do not multiply: use suitable comparable-depth vessels or successive base-size batches. Cup 240 ml, tbsp 15 ml, tsp 5 ml; product directions and actual allergens control.
Common mistakes
- Keep perishables at 4°C or colder. Separate raw meat, eggs and flour tools from ready-to-eat food. Refrigerate shallow portions promptly within 2 hours, or 1 hour above 32°C; do not wait for full counter cooling. These are refrigerator-entry deadlines, not a guaranteed cooling curve.
Substitutions
- Keep the specified raw/cooked/prepared states and amounts. Check actual labels and allergens; reconcile incompatible components rather than adding unmeasured ingredients. Never taste raw flour, dough, batter or sealing paste.
Storage
Keep covered at 4°C or colder for at most 2 days or earlier component-label deadline. This selected household cap is not validated shelf life; assembly does not reset an older ingredient clock. Reheating
Reheat cooked leftovers only once to 74°C throughout, checking representative centres. A timer or browned surface is not enough; respect earlier component deadlines.
