Ingredients
- 240 g RAW fresh tomatoes, chopped TOTAL
- 160 g Commercially RTE canned chunk tuna, DRAINED weight
- 150 g RAW peeled onion, finely chopped
- 15 ml Tomato paste
- 1 tsp Commercial food-grade Bezar spice blend; check label
- 0.5 tsp Ground turmeric
- 15 ml Vegetable oil, total measured allowance
- 60 ml Measured sauce water (4 tbsp)
- 2 cloves Garlic cloves, peeled and minced
- 0.5 tsp Salt, total measured allowance (optional)
Instructions
Select the canned-tuna variant
Use an undamaged commercial ready-to-eat canned chunk-tuna product and follow its label. Drain and weigh 160 g edible tuna. This is not home-canned or raw fresh tuna, nor a raw-to-cooked yield conversion. Keep the can opening and utensils clean.
Prepare the tomato base
Finely chop 150 g peeled onion, garlic and all 240 g fresh tomatoes. Measure 60 ml water, 15 ml paste and 15 ml oil. Ginger and chilli from optional stories are not ingredients in this measured version.
Soften onion and garlic
Soften onion and garlic in all 15 ml oil over medium heat. Check from 3 minutes and continue until translucent; avoid burning the garlic.
Reduce the fresh tomato sauce
Stir in Bezar, turmeric, tomatoes, paste and all 60 ml water. Add at most the optional 0.5 tsp salt. Simmer uncovered from an 8-minute first check until tomatoes collapse and sauce thickens. No finished gravy weight or 1:1.5 ratio is promised.
Tomato sauce first check: 480 seconds
Fold in drained tuna
Gently fold in the drained 160 g ready-to-eat tuna without breaking every chunk. Heat gently from a 5-minute first check to the selected 74°C hot-dish target throughout, extending as needed.
Tuna dish heating first check: 300 seconds
Check the selected serving target
Check several thick parts with a clean thermometer to 74°C and stir gently for even heat. This is a chosen hot-serving check, not a claim that every unopened RTE tuna product needs recooking.
Serve the adaptation clearly
Serve hot with clean utensils at a safe eating temperature. Bread is a separate accompaniment. No eggplant, potato, loomi or unmeasured extra sauce is part of this canned-tuna master.
Respect opening and storage deadlines
Refrigerate shallow leftovers promptly at 4°C or colder and use within 2 days, or the earlier tuna-label/opening deadline. Never return leftovers to the opened can or use this method for raw fresh fish.
Tips
- Base quantities make 2 catalogue servings. For 1 serving halve every measured ingredient and process-water quantity; for 8 multiply by 4. Cup = 240 ml, tbsp = 15 ml, tsp = 5 ml. Keep temperatures, piece thickness and vessel depth fixed; use comparable base-size batches instead of multiplying cooking times. Timers mark first checks, not guaranteed doneness. Follow product cooking and allergen labels.
Common mistakes
- Do not rely on a fixed timer or surface colour alone. Preserve measured partitions and use the stated doneness checks.
Substitutions
- Use the specified food states and equipment. Reconcile another product before changing quantities or method; check every blend and prepared-component allergen label.
Storage
Refrigerate promptly in shallow portions at 4°C or colder, within 2 hours (1 hour above 32°C). Use within 2 days or the earlier component/label deadline. Do not leave the pot cooling on the counter.
Reheating
Reheat only once to 74°C throughout, stirring where possible. Discard temperature-abused food; reheating does not make it safe again.
