Tokwa't Baboy
Ready-fried tofu and cooked pork in a sharp cane-vinegar, soy and red-onion dressing.

Ingredients
- 450 g fried tofu
- 250 g boiled pork
- 2 tbsp cane vinegar
- 1 tsp soy sauce
- 1 pc red onion
Instructions
Prepare the defining ingredients
Cut 450 g ready-fried tofu and 250 g fully cooked boiled pork into bite-size pieces. Thinly slice the red onion; use clean utensils and keep the cooked pork chilled until assembly.
Build the Filipino flavor base
Whisk 2 tbsp cane vinegar with 1 tsp soy sauce in a clean bowl. Stir in half the sliced red onion and let the dressing stand for 2 minutes.
Build Tokwa't Baboy: 120 seconds
Dress the tofu and pork
Just before serving, put the ready-fried tofu and fully cooked pork in a bowl. Add the soy-vinegar dressing and toss gently for about 1 minute so the tofu keeps some crispness. No additional cooking oil or frying is needed.
Toss Tokwa't Baboy: 60 seconds
Finish in its expected form
Scatter over the remaining sliced red onion and serve immediately, with the tofu and pork visible under the tangy dressing.
The tofu is still lightly crisp and the pork was fully cooked before assembly.
Tips
- Use already fried tofu and fully cooked pork; this is an assembly recipe, not a raw-meat cooking method.
- Mix the vinegar, soy and onion first, then dress the tofu just before serving so it stays crisp.
Common mistakes
- Using raw or undercooked pork is unsafe in this ready-to-serve dish.
- Leaving tofu in the dressing too long softens its crisp surface.
Substitutions
- For a pork-free adaptation, replace the 250 g cooked pork with 250 g cooked chicken or browned oyster mushrooms; it is no longer classic tokwa't baboy.
Storage
Refrigerate tofu, cooked pork and dressing separately at 4°C or below within 2 hours; use within 2 days.
Reheating
Reheat the pork and tofu separately until piping hot throughout (74°C), then add the chilled soy-vinegar dressing and onion just before serving.
