Omani Lamb Thareed — Prepared-Stew Assembly
Fully baked Ragag with a measured total portion of prepared brothy stew.

Preparation: 15 min · Cooking: 10 min · Total: 25 min · 2 servings
Ingredients
- 100 g Fully baked dry Omani Ragag bread
- 300 g PREPARED brothy lamb-and-potato Saloona TOTAL, bones removed BEFORE weighing; includes meat, vegetables and broth
Instructions
Select safe prepared components
Use 100 g fully baked dry Ragag and 300 g TOTAL prepared brothy stew. Check the component recipe or label, allergens and storage deadline. Remove bones BEFORE weighing 300 g edible stew including its cooked meat, potato and broth; this is not 300 g liquid plus extra unweighed solids.
Verify the original cooking and reheat branch
The lamb component must originally have been properly cooked to at least 63°C with a 3-minute rest and appropriate tenderness. That is NOT the reheating target: previously prepared stew is heated throughout to 74°C. Use an available measured prepared-stew recipe, not an invented raw lamb formula.
Tear fully baked bread
With clean hands, tear the cool fully baked 100 g bread into bite-size pieces and distribute in a serving dish. This assembly contains no raw flour or bread-baking step.
Heat the whole measured stew
Heat all 300 g prepared stew gently in a saucepan, stirring and checking from 5 minutes until 74°C throughout, including meat centres. Extend as needed. Do not add unlisted water or extra stew to this measured portion.
Prepared stew heating first check: 300 seconds
Use only broth from that portion
Briefly separate hot solids with clean utensils, keeping them hot. Pour broth from this SAME measured stew portion over the bread. Use a suitably brothy component; an arbitrary dry meat mixture may not soften this amount of bread.
Check softening, then top
Check bread softening from 2 minutes. Arrange the hot solids on top and distribute the remaining broth from that same 300 g portion. Do not add an extra unmeasured ladle or demand complete liquid submersion.
Bread softening first check: 120 seconds
Serve promptly
Serve promptly with clean utensils once at a safe eating temperature. This is a prepared-stew assembly, not a from-scratch raw-meat recipe. The ratio is 1 part bread to 3 parts TOTAL prepared stew by weight.
Follow the correct leftover branch
For assembly from freshly cooked stew, refrigerate shallow portions promptly within 2 hours (1 hour above 32°C) at 4°C or colder and use within 24 hours or the earlier component deadline. Stew stored separately keeps its own 2-day maximum. If chilled stew was reheated for assembly, that was its one reheat: prepare only what will be eaten now and discard assembled leftovers, rather than reheat again.
Tips
- Base quantities make 2 catalogue servings. For 1 serving halve every measured ingredient and process-water quantity; for 8 multiply by 4. Cup = 240 ml, tbsp = 15 ml, tsp = 5 ml. Keep temperatures, piece thickness and vessel depth fixed; use comparable base-size batches instead of multiplying cooking times. Timers mark first checks, not guaranteed doneness. Follow product cooking and allergen labels.
Common mistakes
- Do not rely on a fixed timer or surface colour alone. Preserve measured partitions and use the stated doneness checks.
Substitutions
- Use the specified food states and equipment. Reconcile another product before changing quantities or method; check every blend and prepared-component allergen label.
Storage
For assembly from freshly cooked stew, refrigerate shallow portions promptly within 2 hours (1 hour above 32°C) at 4°C or colder and use within 24 hours or the earlier component deadline. Stew stored separately keeps its own 2-day maximum. If chilled stew was reheated for assembly, that was its one reheat: prepare only what will be eaten now and discard assembled leftovers, rather than reheat again.
Reheating
If assembled with freshly cooked stew, reheat refrigerated leftovers once to 74°C throughout within the 24-hour/earlier component limit. If chilled stew was already heated for assembly, do not keep that assembly for another reheat; discard leftovers.
