Instructions
Verify source and divided water
Use 500 g fish weighed before desalting, from a reputable commercial producer with a maintained cold chain. Read its label first. Allocate 2 L per bath for four baths: 8 L total, or 32 L total at fourfold (8 L per bath). Keep the separate 600 ml cooking water out of this discarded allowance.

Desalt entirely in the refrigerator
Submerge fish in the initial measured cold bath at 4°C or colder and make three full water changes with the remaining measured baths. Follow the product instructions for timing and any extra changes; 2 hours is an estimate/checkpoint, not a guaranteed safe or sufficient desalting time. Never taste raw fish or use smell/taste as proof of safety. Discard every bath.
Discard every bath.

Drain fish and prepare rice
After the label-directed desalting, drain fish, remove skin as appropriate and check carefully for loose bones; keep pieces cold until cooking. Rinse and soak rice according to its packet in separate water, then drain and discard that water. Divide 4 tbsp ghee into 3 for the base and 1 for finishing; add no salt.

Build the spiced tomato base
Heat 3 tbsp ghee over medium heat in a heavy pot. Sauté sliced onions until golden, then stir in tomatoes, Bezar, turmeric and ground loomi. Cook until tomatoes soften into the aromatic base, without adding salt.

Layer fish beneath rice
Place drained fish in the base and cook about 3 minutes per side, proceeding directly with cooking. Add the separate 600 ml boiling cooking water, spread drained rice over the fish without stirring and cover with an ordinary non-airtight lid. Cook on low heat for about 25 minutes; distribute the remaining 1 tbsp ghee over the rice.

Check fish and rice, then serve
Rice must be tender and thick fish centres away from bone at least 63°C, opaque and flaking easily; cook longer if needed. Serve carefully around bones. Neither soaking nor cooking removes preformed histamine from mishandled fish.

Separate leftovers promptly
Do not hold the rice and fish lukewarm after serving. Use clean tools to divide into small shallow containers while still warm, without waiting for the whole pot to cool.

Refrigerate within one hour
Divide leftovers promptly into shallow containers and refrigerate within 1 hour at 4°C or colder; do not wait for a deep pot to cool to room temperature. Use within 24 hours. This conservative household limit does not validate shelf life or repair unsafe handling.

Tips
- Quantities and divided allowances in the instructions describe the base batch. Scale them with the ingredient controls, not the cooking times; use multiple comparable pans or batches for a larger yield.
Common mistakes
- Do not treat a timer, colour or aroma alone as proof of readiness. Follow the stated texture and thermometer checks.
Substitutions
- Use commercially cured fish with explicit storage/desalting instructions. Do not substitute unknown home-cured fish or add salt. Longer manufacturer-led soaking changes elapsed time and may require extra discarded water.
Storage
Divide leftovers promptly into shallow containers and refrigerate within 1 hour at 4°C or colder; do not wait for a deep pot to cool to room temperature. Use within 24 hours. This conservative household limit does not validate shelf life or repair unsafe handling.
Reheating
Reheat at most once to 74°C throughout, checking several centres. Reheating cannot make improperly stored food safe.
