Preparation: 15 min · Cooking: 20 min · Total: 45 min · 2 servings
Ingredients
- 300 g fresh sardines, cleaned/scaled/gutted prepared raw weight
- 120 ml commercial ready-to-eat pure tahini
- 3 cloves garlic, minced
- 45 ml fresh lemon juice
- 1 tbsp olive oil
- 1 tsp ground cumin
- salt, to taste
- black pepper, to taste
Instructions
Measure and prepare
Preheat the oven to 190°C and choose a non-reactive oven-rated shallow dish. Weigh 300 g cleaned/scaled/gutted sardines as prepared raw weight. Keep fish at ≤4°C from a monitored cold chain until needed.

Prepare the components
Keep fish at ≤4°C until preparation. Pat already-cleaned fish dry and arrange side-by-side in one layer. Histamine already formed is not removed by washing, lemon, cooking or freezing; do not try to rescue mishandled fish.

Build the base
Mix 120 ml ready-to-eat tahini with 45 ml lemon juice, all 3 minced garlic cloves, cumin, salt and pepper to a uniform thick paste. No water or tomato is listed; do not infer a lemon fruit count or unlimited thinning liquid.

Combine carefully
Spread all thick sauce over the fish and drizzle the single 1 tbsp oil allowance once. Use equivalent trays for 8 servings, without overlapping fish or adding extra garnishes.

Cook and check
Bake at 190°C and begin checks at 18 minutes, usually around 18–20 minutes. Verify thick flesh reaches 63°C, is opaque and separates easily. Do not keep cooked fish in solely to brown the tahini skin.

Finish the cooking
For 8 servings use 1200 g sardines, 480 ml tahini, 180 ml juice, 12 garlic cloves, 4 tbsp oil and 4 tsp cumin. Half retains exactly 0.5 tsp cumin. This thick water-free sauce is distinct from the separate measured-water sardine tray.

Check before serving
Check fish at several points before dividing into 2 portions. Whole sardines may contain bones; remove/check them carefully. Tahini contains sesame, and sauce texture varies by brand.

Serve and store
Serve hot immediately. Refrigerate in shallow portions within 1 hour at ≤4°C; use within 24 hours and reheat at most once to 74°C.

Tips
- Instructions describe the original 2-serving batch. Ingredient controls scale the list to 1 or 8 servings: exactly half or fourfold. One cup is 240 ml, one tbsp 15 ml and one tsp 5 ml. Dry volumes are not gram weights. Use equivalent vessels and manageable batches; times are first checks, not linear scaling rules.
Common mistakes
- Do not add unlisted ingredients or rely on fixed times and surface browning alone.
Substitutions
- Use the stated source states and alternatives; check product directions and allergens.
Storage
Refrigerate promptly within 1 hour in shallow portions at ≤4°C. Use within 24 hours from preparation, including cooling. These are conservative household limits, not a validated shelf life.
Reheating
Reheat leftovers at most once to 74°C throughout, then serve immediately. Keep unused portions refrigerated.
