Instructions

  1. Measure and prepare

Measure 240 ml beans dry, then soak in plenty of separate water at ≤4°C in the refrigerator, beginning checks around 12 hours. Follow a suitable product’s preparation directions and drain thoroughly. Do not hold overnight at room temperature or treat soaking as cooking.

  2. Prepare the components

Wash leek and coriander separately, then process drained beans with 120 ml leek, 60 ml coriander leaves, garlic and salt. Stop/scrape safely with the machine off; begin texture checks after 3 minutes, usually 3–4, until a fine uniform paste forms. Never taste raw bean paste.

  3. Build the base

Transfer to a clean bowl and beat with a fork, checking from 2 minutes until workable and aerated. Mix in all 1 tsp ground coriander. Keep waiting paste at ≤4°C and work in manageable batches.

  4. Combine carefully

Shape patties approximately 4 cm wide and no more than about 1 cm thick. Heat 480 ml initial oil to monitored 175°C in a suitable deep dry vessel, adding conditional oil only for depth; never fill above halfway.

  5. Cook and check

Fry uncrowded batches around 175°C, turning as needed, beginning checks at 4–5 minutes. Continue until centres are fully cooked and soft without raw/gritty bean paste; crust colour alone is insufficient. Use utensils, not fingers over oil, and drain on suitable absorbent paper.

  6. Finish the cooking

For 8 servings use 960 ml dry beans, 480 ml leek, 240 ml coriander leaves, 12 garlic cloves, 4 tsp ground coriander and 1920 ml initial oil (8 cups). Half uses 120 ml dry beans, not 120 ml soaked beans. No soaked yield/gram conversion is inferred. Fava beans are unsuitable for people advised to avoid them due to G6PD deficiency; frying does not remove that restriction.

  7. Check before serving

Serve fully cooked patties warm in 2 portions. Follow product preparation requirements, not a claimed certified toxin-inactivation schedule. Refrigerate leftovers in shallow portions within 1 hour at ≤4°C; use within 24 hours and reheat at most once to 74°C.
