Instructions

  1. Measure and prepare

Use commercially cleaned edible natural lamb casing and follow its soaking/desalting/rinsing directions with the separate process water. Rinsing does not sterilize casing. Keep raw beef, filling, bowl and stuffer at ≤4°C; prevent splashes onto ready-to-eat food.

  2. Prepare the components

Mix 300 g raw beef with all garlic, cumin, chilli, coriander, salt and pepper. Begin checking even distribution around 5 minutes; stop to chill if warming, rather than mixing a large warm batch. No purchased sausage, peanut oil or onion belongs in this master.

  3. Build the base

Fit the prepared casing to a clean food-safe stuffing nozzle and secure the starting end. Fill evenly without overstuffing or large air pockets, then secure the other end. Add conditional prepared casing if the chosen calibre needs it; do not force all filling into too little casing.

  4. Combine carefully

Twist approximately 10 cm links. Only if trapped air requires it, follow the stuffer directions with a suitable cleaned food-safe sausage pricker; do not mandate two punctures or call an ordinary household pin sterile. Keep waiting raw links at ≤4°C.

  5. Cook and check

Arrange links in a dry skillet over medium heat and cook in their own rendering fat, turning as needed. Begin checks around 12–15 minutes and continue until several thick links reach the owner-selected 74°C in the centre. Brown casing alone is insufficient; the general ground-beef/sausage minimum is 71°C, not a new statutory 74°C rule.

  6. Finish the cooking

For 8 servings use 1200 g raw beef, 16 garlic cloves, 4 tbsp cumin, 4 tsp each chilli/coriander and 4 m prepared casing. Half uses 150 g beef and 0.5 m casing. Use manageable cold stuffing/cooking batches rather than changing the formulation.

  7. Check before serving

Freeze only raw, never partly cooked spare links promptly in labelled airtight food-safe packaging at ≤−18°C, up to 2 months for quality. Thaw at ≤4°C in the refrigerator, never on the counter, and cook fully. Use refrigerated raw links within the selected 24 hours; freezing does not rescue mishandled meat.

  8. Serve and store

Remove any actual kitchen string before serving 2 hot portions, with optional lime wedges. Refrigerate cooked leftovers in shallow portions within 1 hour at ≤4°C; use within 24 hours and reheat at most once to 74°C.
