Fully cooked shrimp kept hot while measured basmati rice simmers.

Preparation: 15 min · Cooking: 25 min · Total: 1 hr 10 min · 2 servings
Ingredients
- 200 g DRY basmati rice
- 200 g RAW peeled deveined shrimp
- 300 ml Initial rice-cooking water
- 150 g RAW peeled onion, finely chopped
- 1 tbsp Commercial food-grade Bezar spice blend; check label
- 1 tsp Ground turmeric
- 15 ml Vegetable oil, total measured allowance
- 2 cloves Garlic cloves, peeled and minced
- 1 tsp Salt, total measured allowance
- 500 ml Rice-rinsing water, discarded
- 750 ml Cold rice-soaking water, discarded
- 100 ml Hot rice-water reserve, maximum (optional)
Instructions
Rinse and soak rice
Rinse the 200 g dry rice in 500 ml water and discard it. Soak in the separate 750 ml cold water for 20 minutes refrigerated at 4°C or colder, then drain; none of this discarded water replaces the 300 ml cooking water.
Refrigerated rice soak: 1200 seconds
Prepare and divide the seasoning
Keep raw shrimp chilled and separate. Season with all 1 tsp turmeric and 0.5 tsp of the total 1 tsp salt. Reserve the other 0.5 tsp salt for the onion base. Measure 300 ml initial cooking water and keep the optional 100 ml hot reserve separate.
Soften the onion base
Soften onion and garlic in all 15 ml oil in a heavy pot over medium heat until translucent. Briefly stir in Bezar and the reserved 0.5 tsp salt without burning the spices. Keep this same pot for the rice.
Cook shrimp fully before removing
Add shrimp to the aromatic base, checking from 3 minutes. Cook fully to 63°C with pearly opaque, firm flesh BEFORE removing with clean utensils. Keep fully cooked shrimp hot at 60°C or above during the short rice phase; never leave partly cooked shrimp waiting on a plate.
Shrimp first doneness check: 180 seconds
Simmer rice with measured water
Add drained rice and 300 ml water to the same aromatic pot. Bring just to a simmer, cover with a normal fitted lid and cook on low from a 15-minute first check. Do not first evaporate an unknown amount uncovered. Add only the capped 100 ml hot reserve if grains need it.
Rice first doneness check: 900 seconds
Return hot shrimp and finish
When rice is tender, return the fully hot cooked shrimp for a brief final hot finish. Check the combined dish to the selected 74°C target. Do not impose another fixed 15-minute shrimp steam after it is already fully cooked.
Rest covered off heat
Rest covered off heat for 5 minutes, then fluff gently with clean utensils. Verify tender rice and fully cooked shrimp; do not use a timer as a substitute for temperature checks. Serve promptly.
Covered rice rest: 300 seconds
Cool rice leftovers promptly
Cool rice rapidly in shallow portions, ideally within 1 hour, and refrigerate at 4°C or colder for at most 24 hours. Reheat only once to 74°C throughout. Follow earlier component deadlines.
Tips
- Base quantities make 2 catalogue servings. For 1 serving halve every measured ingredient and process-water quantity; for 8 multiply by 4. Cup = 240 ml, tbsp = 15 ml, tsp = 5 ml. Keep temperatures, piece thickness and vessel depth fixed; use comparable base-size batches instead of multiplying cooking times. Timers mark first checks, not guaranteed doneness. Follow product cooking and allergen labels.
Common mistakes
- Do not rely on a fixed timer or surface colour alone. Preserve measured partitions and use the stated doneness checks.
Substitutions
- Use the specified food states and equipment. Reconcile another product before changing quantities or method; check every blend and prepared-component allergen label.

Reheating
Reheat only once to 74°C throughout, stirring where possible. Discard temperature-abused food; reheating does not make it safe again.
