Shepherd's Pie
A British baked dish of savory minced-lamb filling topped with creamy mashed potato.

Ingredients
- 500 g ground lamb — Keep refrigerated until cooking.
- 1000 g floury potatoes — Peeled and cut into 3 cm pieces.
- 200 g carrots — Diced into 1 cm pieces.
- 150 g frozen peas — Do not thaw.
- 150 g onion — Finely chopped.
- 1 tbsp neutral cooking oil
- 2 tbsp tomato paste
- 20 g plain flour
- 400 ml low-salt lamb or beef stock — Hot.
- 1 tbsp Worcestershire sauce — May contain anchovy; check the allergen label.
- 50 g unsalted butter — Cubed.
- 100 ml whole milk — Warmed.
- 1 tsp fine salt — 1/2 tsp for mash and 1/2 tsp for filling.
- 0.5 tsp ground black pepper — 1/4 tsp for mash and 1/4 tsp for filling.
- 1 tbsp fresh thyme leaves (optional) — Optional.
Instructions
Preheat and organise safely
Heat the oven to 200°C conventional (180°C fan). Put a rimmed baking sheet in the oven to catch drips. Keep the ground lamb refrigerated and separate from vegetables until cooking; use a separate board or prepare the vegetables first, then wash the board, knife and hands before handling lamb.
Prepare vegetables and potatoes
Peel the potatoes and cut them into even 3 cm pieces. Dice the carrots into 1 cm pieces and finely chop the onion. Measure the peas while still frozen. Warm the milk gently so it will not cool the mash. Check Worcestershire sauce for fish allergen if serving anyone with an allergy.
Cook the mash and lamb filling
Cover potatoes with cold water, bring to a boil and simmer 15–18 minutes until a knife slides through easily. Drain, return to the dry pan for 1 minute over low heat, then mash with butter, warm milk, 1/2 teaspoon salt and 1/4 teaspoon pepper until smooth. Meanwhile heat oil in a large skillet over medium-high heat; cook lamb for 6–8 minutes, breaking it up, until no pink remains and it reaches 71°C. Add onion and carrots and cook 5 minutes. Stir in tomato paste and flour for 1 minute, then gradually add stock, Worcestershire sauce, thyme, remaining salt and pepper. Simmer 8–10 minutes until thick enough to coat a spoon; stir in frozen peas for the final 2 minutes.
Assemble and bake
Spread the hot lamb filling evenly in a 2 litre baking dish. Spoon the mash over it, working from the edges inward to seal the filling, then roughen the surface with a fork. Put the dish on the hot baking sheet. Start the retained 28-minute timer and bake until the filling bubbles at the edges and the potato top is golden. If it is not ready at 28 minutes, continue in 5-minute intervals.

Rest before serving
Move the dish to a heatproof surface and rest for 10 minutes. The dish and filling remain extremely hot, so use dry oven gloves and keep the baking dish away from the edge of the counter. Resting thickens the filling and prevents the portions from collapsing.
Check doneness and temperature
Before baking, the crumbled lamb must have reached 71°C with no pink pieces. After baking, the centre should be steaming hot, the filling should bubble around the edges and the potato ridges should be golden. A spoonful from the centre should hold together rather than release a watery pool. Extend baking in 5-minute intervals if these cues are not met.

Serve, cool and reheat safely
Serve in 6 portions. Divide leftovers into shallow covered containers and refrigerate within 2 hours; use within 3 days. Reheat only the needed amount in an oven or microwave until every part reaches 74°C. Do not repeatedly cool and reheat the same portion.
Tips
- Spread mash from the edges inward so it seals the filling and prevents bubbling sauce from flooding the top.
Common mistakes
- Watery filling makes the mash sink; simmer until it coats a spoon before assembling.
- Using beef but calling it Shepherd's Pie is culturally inaccurate; the beef version is Cottage Pie.
Substitutions
- For Cottage Pie, replace lamb with ground beef and keep the method unchanged; label the resulting dish Cottage Pie.
