Preparation: 15 min · Cooking: 20 min · Total: 45 min · 2 servings
Ingredients
- 300 g fresh sardines, cleaned/scaled/gutted prepared weight
- 120 ml commercial ready-to-eat tahini
- lemon, juice only — 1
- 60 ml water
- garlic cloves, crushed — 4
- 1 tbsp ground cumin
- 1 tbsp olive oil
- salt, to taste
- black pepper, to taste
Instructions
Measure and prepare
Preheat the oven to 200°C and use a non-reactive oven-rated dish. Measure sardines after cleaning as 300 g prepared weight. Keep the fish at ≤4°C until preparation.
Keep the fish at ≤4°C until preparation.
Prepare the ingredients
Use fish from a monitored cold chain and reject mishandled fish. Histamine already formed in sardines is not removed by lemon, washing, cooking or freezing; baking cannot rescue spoiled fish. Keep at ≤4°C and pat cleaned fish dry.

Build the base
Whisk 120 ml ready-to-eat tahini with 60 ml water, juice of 1 lemon, all 4 crushed garlic cloves, cumin, salt and pepper. Use the measured water, not an unlimited thinning allowance.

Combine the components
Arrange sardines side-by-side in one layer. Pour over all tahini sauce and drizzle the single 1 tbsp olive oil allowance once. Do not add onion, tomato, extra lemon wheels or green chillies.

Cook and check
Bake at 200°C and begin checks at 15 minutes, usually around 15–18 minutes. Continue until thick fish flesh reaches 63°C, is opaque and separates easily. Browned sauce alone is insufficient.

Finish carefully
For 8 servings use 1200 g prepared sardines, 480 ml tahini, 240 ml water, juice of 4 lemons, 16 garlic cloves and 4 tbsp each cumin and oil. Use equivalent trays without overlapping fish.

Check before serving
Check fish flesh at several points before dividing into 2 portions. Whole sardines can contain bones; remove or check them carefully. Tahini contains sesame. Sauce coverage and separation vary with the brand.

Tips
- Instructions describe the original 2-serving batch. Scale the ingredient list to 1 or 8 servings: exactly half or fourfold. One cup is 240 ml, one tbsp 15 ml and one tsp 5 ml. Dry volumes are not gram weights. Use equivalent vessels/batches; cooking times are checks, not linear scaling rules.
Common mistakes
- Do not add unlisted ingredients or use the timer alone as a doneness test.
Substitutions
- Use only the listed alternatives and ingredient states; check product directions and allergens.
Storage
Refrigerate promptly within 1 hour in shallow portions at ≤4°C. Use within 24 hours from preparation, including chilling. These are selected conservative household limits, not a validated shelf life.
Reheating
Reheat leftovers at most once to 74°C throughout, then serve immediately. Keep unused portions refrigerated.
