Twenty pastry triangles with cooked, promptly chilled spiced lamb filling.

Preparation: 45 min · Cooking: 35 min · Total: 1 hr 55 min · 20 servings
Ingredients
- samboosa pastry wrappers — 20 — 20 individual pieces at base yield, 80 at fourfold. Choose wrappers large enough for an even share of filling without overstuffing; follow their cooking instructions.
- 250 g raw lean minced lamb
- large onion, finely chopped — 1
- garlic cloves, minced — 3
- 50 g peas
- 1 tbsp Emirati Bezar spice blend
- 1 tsp ground loomi
- 1 tsp ground coriander
- 1 tsp salt
- 1 tbsp wheat flour for sealing slurry
- 1.5 tbsp water for sealing slurry
- 1 tbsp vegetable oil for sautéing the filling
- separate vegetable frying oil, about 5 cm depth
Instructions
Measure the piece yield and slurry
The base yield is 20 individual samboosas, not 20 meal portions; maximum is 80 pieces. Mix 1 tbsp wheat flour with 1.5 tbsp water for sealing; at fourfold use 4 + 6 tbsp. Keep frying oil separate from any measured sauté fat.

Prepare raw-meat handling
Keep raw lamb at 4°C or colder. Do not wash minced meat. Chop onion and garlic with separate clean tools; measure peas and spices. Set out shallow cooling containers before cooking, not after a deep pot has stood cooling.

Cook filling to 71°C
Heat the separate 1 tbsp sauté oil over medium heat and soften onion and garlic. Add lamb and break up thoroughly with Bezar, loomi, coriander and salt. Cook about 10 minutes, add peas and cook about 2 minutes more. Verify at least 71°C in several areas of the filling; continue if needed.

Chill promptly, then wrap cold
Immediately divide cooked filling into shallow containers and refrigerate within 1 hour at 4°C or colder. Do not wait for a deep pot to cool completely at room temperature. Once chilled, divide the whole filling evenly among 20 wrappers (80 fourfold), using small cold working portions while the rest stays refrigerated. Seal triangles with the measured slurry; do not equate a spoonful with 20 g.

Fry in small batches
Add vegetable frying oil to about 5 cm depth in a stable deep pot, never more than half full. Heat to 175°C and monitor with a suitable thermometer. Fry 4–5 pieces at a time for about 3–4 minutes, following wrapper instructions; turn with dry tools and drain with a slotted spoon. Do not multiply frying time with the number of pieces.

Check pastry and reheated filling
Check several samboosa centres with a clean probe: the previously chilled filling must reach 74°C throughout. Carefully open a test piece and inspect inner pastry layers and flour-sealed seams for fully cooked dough, without raw flour paste. Continue cooking as needed; a hot centre or golden crust alone is not enough.

Drain and serve promptly
Drain cooked pieces with a slotted spoon onto a clean rack and serve promptly. Keep uncooked wrapped pieces and unused filling refrigerated at 4°C or colder between frying batches.

Store within the original filling clock
Refrigerate leftovers promptly in shallow containers within 1 hour at 4°C or colder. Use within 24 hours counted from the original filling cook, not from frying; do not reset the clock. Reheat at most once to 74°C throughout.

Tips
- Quantities and divided allowances in the instructions describe the base batch. Scale them with the ingredient controls, not the cooking times; use multiple comparable pans or batches for a larger yield.
Common mistakes
- Do not treat a timer, colour or aroma alone as proof of readiness. Follow the stated texture and thermometer checks.
Substitutions
- Do not substitute a raw meat filling into the chilled cooked-filling workflow. Check pastry labels for wheat, egg or milk. The measured sauté oil is not the frying oil.
Storage
Divide leftovers promptly into shallow containers and refrigerate within 1 hour at 4°C or colder; do not wait for a deep pot to cool to room temperature. Use within 24 hours. This conservative household limit does not validate shelf life or repair unsafe handling. Count the 24-hour limit from the initial filling cook; frying does not reset it.
Reheating
Reheat at most once to 74°C throughout, checking several centres. Reheating cannot make improperly stored food safe.
