Instructions

  1. Measure the piece yield and slurry

The base yield is 20 individual samboosas, not 20 meal portions; maximum is 80 pieces. Mix 1 tbsp wheat flour with 1.5 tbsp water for sealing; at fourfold use 4 + 6 tbsp. Keep frying oil separate from any measured sauté fat.

  2. Prepare chilled dairy and herbs

Keep pasteurized cheeses at 4°C or colder. Wash mint and dill under running water, dry and chop with clean tools; washing removes debris but does not sterilize herbs. Drain and crumble the white cheese.

  3. Mix the cheese filling

Mix 300 g crumbled feta or Akkawi with 100 g cream cheese, 30 g mint, 20 g dill and 1 tsp nigella. Keep the bowl refrigerated and remove only a small working portion for wrapping.

  4. Divide filling and seal triangles

Divide the entire filling evenly across the 20 wrappers (80 at fourfold); do not equate a tablespoon with 20 g. Fold each wrapper into a triangle without overstuffing, brush the edge with measured flour-water slurry and press closed. Keep filled pieces and remaining filling refrigerated until frying.

  5. Fry in small batches

Add vegetable frying oil to about 5 cm depth in a stable deep pot, never more than half full. Heat to 175°C and monitor with a suitable thermometer. Fry 4–5 pieces at a time for about 3–4 minutes, following wrapper instructions; turn with dry tools and drain with a slotted spoon. Do not multiply frying time with the number of pieces.

  6. Check inner pastry and seams

After frying in 175°C oil, check readiness rather than relying on time. Open a test piece carefully away from hot steam. Both inner pastry layers and flour-sealed seams must be cooked through, without raw flour paste or dough, and the cheese filling hot throughout. Follow the wrapper cooking directions and continue cooking if needed; do not rely on a golden exterior alone.

  7. Drain and serve hot

Drain fully cooked samboosas on a clean rack or absorbent paper. Serve hot with clean tools and avoid scalding melted cheese. Keep unused filling at 4°C or colder.

  8. Refrigerate leftovers promptly

Divide leftovers promptly into shallow containers and refrigerate within 1 hour at 4°C or colder; do not wait for a deep pot to cool to room temperature. Use within 2 days. This conservative household limit does not validate shelf life or repair unsafe handling.
