Instructions

  1. Divide the measured allowances

At base yield divide 4 tbsp oil into 2 tbsp onions, 1 tbsp searing and 1 tbsp finishing. Divide Bezar into 0.5 + 0.5 tbsp and salt into 1 tsp broth + 0.5 tsp fish. At fourfold oil is 8 + 4 + 4 tbsp; strained rice broth is 3000 ml.

  2. Prepare chilled fish and rice

Keep fish refrigerated while preparing the broth. Rinse rice, soak according to its packet and drain fully; discard that separate water. Slice onions and prepare clean thermometer and serving tools.

  3. Brown onions, then simmer broth

Heat 2 tbsp oil over medium-high heat. Stir onions for about 15 minutes to dark walnut brown, not burnt black. Add 1000 ml water, 0.5 tbsp Bezar, 1 tsp salt, turmeric and 1 tsp ground loomi. Simmer for 20 minutes.

  4. Measure broth and start rice

Strain and press the onions; measure exactly 750 ml broth. If short, top up only to that target with boiling water; retain any excess separately, not in the rice. Bring measured broth to a boil, add drained rice and cook until the liquid reaches grain level. Keep covered over very low heat while searing fish immediately.

  5. Sear and transfer without holding

Season fish with reserved 0.5 tbsp Bezar and 0.5 tsp salt. Heat reserved 1 tbsp oil in a skillet over medium-high heat; sear about 2 minutes per side, then immediately transfer onto the hot rice. Add the final 1 tbsp oil; cover with an ordinary close-fitting, non-airtight lid and steam on low heat for about 20 minutes. Do not store or cool partially cooked fish.

  6. Check fish and garnish

Check several thick fish centres to at least 63°C, with opaque flesh that flakes easily; rice must be tender. Continue cooking if needed, then garnish with the measured toasted pine nuts or almonds.

  7. Serve without prolonged warm holding

  8. Refrigerate fish and rice promptly

Divide leftovers promptly into shallow containers and refrigerate within 1 hour at 4°C or colder; do not wait for a deep pot to cool to room temperature. Use within 24 hours. This conservative household limit does not validate shelf life or repair unsafe handling.
