Preparation: 15 min · Cooking: 30 min · Total: 1 hr · 2 servings
Ingredients
- 75 g RAW peeled potato, small cubes
- 75 g RAW eggplant, small cubes
- 75 g RAW whole trimmed okra
- 75 g RAW peeled pumpkin, small cubes
- 360 ml Initial stew water
- 150 g RAW peeled onion, finely chopped
- 30 ml Tomato paste
- 1 tbsp Commercial food-grade Bezar spice blend; check label
- 1 tsp Salt, total measured allowance
- 15 ml Vegetable oil, total measured allowance
- 2 cloves Garlic cloves, peeled and minced
- Whole dried lime (loomi) — 1
- 120 ml Hot stew-water reserve, maximum (optional)
Instructions
Prepare 300 g raw vegetables
Wash and prepare 75 g each of raw potato, eggplant, pumpkin and whole trimmed okra. Cube the first three similarly; keep okra whole. These are raw edible weights, not cooked yields.
Measure water and prepare loomi
Measure 360 ml initial water and keep the optional 120 ml hot reserve separate. Pierce the loomi carefully on a board with fingers away from the tool. Use a heavy pot and normal fitted lid.
Soften onion and add spices
Soften onion and garlic in all 15 ml oil over medium heat, checking from 3 minutes. Stir in 30 ml tomato paste, Bezar and all 1 tsp salt briefly without burning the spices.
Onion first check: 180 seconds
Simmer the firmer vegetables first
Add potato, eggplant, pumpkin, loomi and 360 ml water. Bring to a gentle simmer and cover with a normal lid. Check from 15 minutes, stirring periodically, until nearly tender. Use only the capped 120 ml hot reserve if drying.
Add whole okra last
Add the 75 g whole okra without crushing it. Continue on low, checking from 10 minutes until okra and the other vegetables are tender. Stir gently and check moisture rather than leaving the pot unattended.
Okra first doneness check: 600 seconds
Check the centres
Test potato and pumpkin centres with a fork. Continue gentle simmering if firm, using only the measured reserve as needed; a fixed 10-minute timer does not establish tenderness.
Remove hard lime fragments
Remove the loomi and hard fragments with clean utensils. Keep the stew brothy rather than boiling dry; no extra unlisted vegetables or water are part of the 300 g raw-vegetable master.
Serve and store separately
Serve hot. Bread and rice are separate accompaniments, not hidden ingredients. Refrigerate shallow leftovers promptly at 4°C or colder and use within 2 days.
Tips
- Base quantities make 2 catalogue servings. For 1 serving halve every measured ingredient and process-water quantity; for 8 multiply by 4. Cup = 240 ml, tbsp = 15 ml, tsp = 5 ml. Keep temperatures, piece thickness and vessel depth fixed; use comparable base-size batches instead of multiplying cooking times. Timers mark first checks, not guaranteed doneness. Follow product cooking and allergen labels.
Common mistakes
- Do not rely on a fixed timer or surface colour alone. Preserve measured partitions and use the stated doneness checks.
Substitutions
- Use the specified food states and equipment. Reconcile another product before changing quantities or method; check every blend and prepared-component allergen label.
Storage
Refrigerate promptly in shallow portions at 4°C or colder, within 2 hours (1 hour above 32°C). Use within 2 days or the earlier component/label deadline. Do not leave the pot cooling on the counter.
Reheating
Reheat only once to 74°C throughout, stirring where possible. Discard temperature-abused food; reheating does not make it safe again.
