Preparation: 15 min · Cooking: 35 min · Total: 1 hr 5 min · 2 servings
Ingredients
- 250 g RAW kingfish (Scomberomorus commerson), 2 cm steaks
- 100 g RAW peeled potato, small cubes
- 75 g RAW fresh tomato, chopped
- Whole dried lime (loomi) — 1
- 75 g RAW bell pepper, diced
- 375 ml Initial stew water
- 150 g RAW peeled onion, finely chopped
- 30 ml Tomato paste
- 1 tbsp Commercial food-grade Bezar spice blend; check label
- 15 ml Vegetable oil, total measured allowance
- 2 cloves Garlic cloves, peeled and minced
- 0.5 tsp Ground turmeric
- 0.5 tsp Salt, total measured allowance
- 125 ml Hot sauce-water reserve, maximum (optional)
Instructions
Keep fish cold and season
Use properly cold-chain-sourced kingfish and keep at 4°C or colder. Season 2 cm steaks with all 0.5 tsp turmeric and 0.25 tsp of the total 0.5 tsp salt. Keep raw-fish utensils separate. Cooking does not remove histamine already formed in mishandled fish.
Prepare the sauce before searing fish
Dice the raw vegetables: 100 g potato, 75 g pepper and 75 g fresh tomato. Split 15 ml oil into 7.5 ml fish and 7.5 ml sauce. Carefully pierce loomi on a board with fingers clear; keep hard fragments out of the finished stew.
Cook the potato sauce first
Soften onion and garlic in the sauce 7.5 ml oil over medium heat. Add paste, Bezar, remaining 0.25 tsp salt, potato, loomi and 375 ml water. Simmer under a normal fitted lid from 15 minutes until potatoes are nearly tender. Stir/check and use only the capped 125 ml hot reserve if needed.
Potato sauce first check: 900 seconds
Finish the vegetable base
Add the 75 g pepper and 75 g fresh tomato and continue simmering until softened. Keep the stew hot and ready before beginning the fish sear; do not prepare the sauce while partly cooked fish waits on the counter.
Sear and transfer immediately
Only when the stew is ready, heat the fish 7.5 ml oil in a separate pan over medium heat. Sear steaks, checking from 2 minutes each side, then transfer IMMEDIATELY into the hot stew for continuous cooking. The sear is not a finished-fish safety check.
Finish gently to 63°C
Simmer gently from an 8-minute first check until the thickest fish reaches 63°C and vegetables are tender. Extend as needed; avoid vigorous stirring that breaks steaks. Do not assume exactly 8 minutes is sufficient.
Fish stew first doneness check: 480 seconds
Check flesh and remove hard pieces
Check thick fish away from bone with a clean thermometer: at least 63°C, opaque and separating easily. Test potato centres and remove loomi and hard fragments before serving; warn about fish bones.
Serve and refrigerate promptly
Serve hot with clean utensils. Refrigerate shallow leftover portions promptly at 4°C or colder and use within 2 days. Do not add unlisted rice or bread to this measured master.
Tips
- Base quantities make 2 catalogue servings. For 1 serving halve every measured ingredient and process-water quantity; for 8 multiply by 4. Cup = 240 ml, tbsp = 15 ml, tsp = 5 ml. Keep temperatures, piece thickness and vessel depth fixed; use comparable base-size batches instead of multiplying cooking times. Timers mark first checks, not guaranteed doneness. Follow product cooking and allergen labels.
Common mistakes
- Do not rely on a fixed timer or surface colour alone. Preserve measured partitions and use the stated doneness checks.
Substitutions
- Use the specified food states and equipment. Reconcile another product before changing quantities or method; check every blend and prepared-component allergen label.
Storage
Refrigerate promptly in shallow portions at 4°C or colder, within 2 hours (1 hour above 32°C). Use within 2 days or the earlier component/label deadline. Do not leave the pot cooling on the counter.
Reheating
Reheat only once to 74°C throughout, stirring where possible. Discard temperature-abused food; reheating does not make it safe again.
