Emirati sago pudding combines starch pearls with caramel, ghee and fragrant spices.

Preparation: 15 min · Cooking: 40 min · Total: 1 hr 25 min · 6 servings
Ingredients
- 200 g dry sago pearls
- 200 g granulated sugar
- 1 pinch saffron threads
- 1 tsp ground cardamom
- 800 ml drinking water — 750 ml direct + 50 ml saffron infusion. Rosewater is separate.
- 2 tbsp food-grade rosewater
- 40 g ghee, total allowance
- toasted nuts for garnish, optional (optional)
- separate soaking water, completely discarded
Instructions
Prepare measured allowances
Of 800 ml total cooking water, reserve 50 ml to infuse the confirmed 1 pinch saffron and 750 ml for caramel. At fourfold use 200 + 3000 ml and 4 pinches. Rosewater is additional: 2 tbsp at base, 8 tbsp fourfold; soaking water is separate and discarded.
Prepare equipment and handling
Hot caramel can cause severe burns. Use a deep stable pot; take it off heat before cautiously adding the direct water in small increments with face and hands away, then return to medium heat to dissolve. Check pearls for tender translucent centres; time alone is not proof.
Soak & Discard
Submerge dry sago pearls in a bowl of separate soaking water for exactly 30 minutes until slightly softened. Drain and completely discard all soaking water before cooking. Bloom saffron threads in 50 ml warm water to build your saffron water allocation.

Caramelize Base
Melt the measured 200 g sugar in a deep heavy pot over medium heat to amber caramel. Take the pot off the heat. With face and hands away, carefully add the measured 750 ml direct water a little at a time using a long-handled utensil; expect spitting and steam. Return to medium heat and stir until all hardened caramel dissolves.
Simmer Pearls
Stir in the drained sago pearls, ground cardamom, and the 50 ml saffron water. Lower heat to absolute minimum. Cover and simmer gently for 25 to 30 minutes, opening the lid frequently to stir the bottom deeply to prevent the starch from scorching.

Finish & Verify
Pour in the 40 g ghee and 2 tbsp rosewater. Stir continuously for 5 minutes until the pudding thickens into a glossy, semi-translucent, gelatinous mass. Verify that every single sago pearl is fully translucent and clear, with no hard white opaque starch centers remaining. Serve warm topped with toasted nuts. Cool leftovers within 1 hour, store in an airtight container in the refrigerator at or below 4°C, and consume within 2 days.

Cool and store
Divide perishable leftovers promptly into small shallow containers and refrigerate within 1 hour at or below 4°C. Use within 2 days. Do not wait for a deep pot or full platter to reach room temperature.
Serve leftovers appropriately
If reheating, heat only the needed portion at most once to 74°C throughout. Stir or turn and thermometer-check several locations, including solid or dough centres. Reheating cannot repair improper storage; discard reheated leftovers.
Tips
- Selected ingredient amounts govern scaling. Numbers in the method describe the base batch: multiply allocations and piece counts in the same ratio. Use appropriately sized pots or multiple comparable pans/batches; timers do not multiply and never guarantee readiness.
Common mistakes
- Do not treat surface colour, a timer or a dry appearance as a guarantee of safe cooking. Follow the specific centre, texture and temperature checks.
Substitutions
- Follow the approved master ingredients and quantities; changes may require different liquid amounts or cooking methods. Optional garnishes may be omitted.
