Small sago pearls with cooled-then-diluted caramel, saffron and rosewater.

Preparation: 15 min · Cooking: 45 min · Total: 2 hr 10 min · 2 servings
Ingredients
- 100 g Small food-grade sago pearls; follow package
- 100 g Granulated sugar
- 0.0625 tsp Dry saffron threads
- 20 ml Food-grade rosewater
- 240 ml Cold sago-soaking water, RETAINED
- 160 ml Room-temperature caramel-dilution water
- 30 g Ghee (clarified butter)
- 0.5 tsp Ground cardamom
- 250 ml Sago-rinsing water, discarded
- 100 ml Hot cooking-water reserve, maximum (optional)
- 10 g Commercially RTE roasted unsalted cashews, chopped (optional)
Instructions
Measure the separate liquids
Measure 240 ml soaking water and 160 ml dilution water: together 400 ml initial water, not two additional additions. Use a deep heavy pot and heat-rated serving bowls. Keep the optional 100 ml hot reserve separate.
Rinse and soak the pearls
Rinse sago in 250 ml water and discard that rinse. Soak in 240 ml cold water for 30 minutes refrigerated at 4°C or colder; RETAIN this soaking water. Infuse the saffron in all 20 ml rosewater separately.
Refrigerated sago soak: 1800 seconds
Make caramel, then cool completely
Melt dry sugar over controlled medium-low heat to light amber, watching continuously. Remove the pot to a stable heatproof support and let BOTH caramel and pot cool completely before any water addition. First check after 30 minutes, but extend until completely cool. Never touch or taste caramel, quench the hot pot, or pour water into hot caramel.
Caramel cooling first check: 1800 seconds
Dilute only when completely cool
Only after caramel AND pot are completely cool, add the measured 160 ml room-temperature water. Return to low heat and dissolve the hardened caramel gently. Keep face and hands away; do not use cold water to cool a hot pan.
Simmer the sago
Add the pearls with ALL their retained 240 ml soaking water. Simmer gently, stirring frequently from 20 minutes until fully tender and translucent according to the pearl package. Add only the optional 100 ml hot reserve as needed, not automatically.
Sago simmer first check: 1200 seconds
Finish with ghee and aromatics
Stir in 30 g ghee, cardamom and the saffron-rosewater infusion. Cook gently, checking from 5 minutes, until evenly combined and softly gelled. Do not cook dry merely to make it pull away from the pot.
Aromatic finish first check: 300 seconds
Check the cooked centres
Check several pearls: no hard or chalky centre may remain. Continue gently as needed, within the measured water reserve and package directions; a timer alone does not prove doneness.
Serve in heat-rated bowls
Spoon into heat-rated bowls, avoiding hot-to-cold glass shock. Add only the optional measured 10 g RTE cashews. Let the hot gel reach a safe eating temperature. Refrigerate promptly and use within 2 days.
Tips
- Base quantities make 2 catalogue servings. For 1 serving halve every measured ingredient and process-water quantity; for 8 multiply by 4. Cup = 240 ml, tbsp = 15 ml, tsp = 5 ml. Keep temperatures, piece thickness and vessel depth fixed; use comparable base-size batches instead of multiplying cooking times. Timers mark first checks, not guaranteed doneness. Follow product cooking and allergen labels.
- For tiny saffron fractions, make a measured base infusion and divide it proportionally instead of guessing dry threads. Keep ghee measured by grams, not an assumed equal millilitre volume.
Common mistakes
- Do not rely on a fixed timer or surface colour alone. Preserve measured partitions and use the stated doneness checks.
Substitutions
- Use the specified food states and equipment. Reconcile another product before changing quantities or method; check every blend and prepared-component allergen label.
Storage
Refrigerate promptly in shallow portions at 4°C or colder, within 2 hours (1 hour above 32°C). Use within 2 days or the earlier component/label deadline. Do not leave the pot cooling on the counter.
Reheating
Reheat only once to 74°C throughout, stirring where possible. Discard temperature-abused food; reheating does not make it safe again.
