Khameer is a spiced, yeast-raised bread served in Emirati homes.

Preparation: 25 min · Cooking: 30 min · Total: 2 hr · 8 servings
Ingredients
- 400 g ordinary wheat flour
- 8 g instant yeast
- 1 pinch saffron threads
- 2 tbsp sesame seeds
- 100 ml pasteurized milk
- 100 ml drinking water
- 25 g granulated sugar
- 1 tsp ground cardamom
- 0.5 tsp fine salt
- medium egg for surface wash — 1
- wheat flour for dusting, as needed
- vegetable oil for pan-greasing, as needed
Instructions
Prepare measured allowances
Measure 100 ml milk and 100 ml water separately: together they make 200 ml liquid for the base batch. No additional saffron water is used in this latest master. Reserve the measured egg and sesame for the bread surfaces.
Prepare equipment and handling
Never taste raw flour dough or egg wash. Cook on medium heat until all inner bread layers are fully cooked and the egg wash is completely set on the flipped side. Allow extra time on lower heat if the centre remains doughy; puffing and browning are not guarantees.
Knead Spiced Dough
Whisk warm milk, water, yeast, and sugar. Let sit for 5 minutes. Stir in ordinary flour, cardamom, saffron, and salt. Knead for 10 minutes into a smooth, aromatic dough. (Do not taste raw dough). Cover with a damp cloth and let rise in a warm spot for 1 hour until doubled.

Shape Rounds
Punch dough down. On a surface lightly dusted with unmeasured flour, divide into 8 equal balls. Roll each ball into a circular flatbread about 8 mm thick. Cover and proof for 15 minutes.

Wash & Bake
Heat a non-stick frying pan or iron griddle over medium heat, greased lightly with unmeasured oil. Gently lay the flatbread down. Brush the top surface with the raw egg wash and scatter sesame seeds over it.
Cook & Verify
Flip once the bottom puffs and turns golden. Cook the egg-washed side for 1.5 to 2 minutes. Verify that the center of the bread is completely firm, airy, dry, and baked through. Cool and store refrigerated at or below 4°C for up to 3 days.

Cool and store
Divide perishable leftovers promptly into small shallow containers and refrigerate within 1 hour at or below 4°C. Use within 3 days. Do not wait for a deep pot or full platter to reach room temperature.
Serve leftovers appropriately
If reheating, heat only the needed portion at most once to 74°C throughout. Stir or turn and thermometer-check several locations, including solid or dough centres. Reheating cannot repair improper storage; discard reheated leftovers.
Tips
- Selected ingredient amounts govern scaling. Numbers in the method describe the base batch: multiply allocations and piece counts in the same ratio. Use appropriately sized pots or multiple comparable pans/batches; timers do not multiply and never guarantee readiness.
Common mistakes
- Do not treat surface colour, a timer or a dry appearance as a guarantee of safe cooking. Follow the specific centre, texture and temperature checks.
Substitutions
- Follow the approved master ingredients and quantities; changes may require different liquid amounts or cooking methods. Optional garnishes may be omitted.
