Instructions

  1. Divide fat, spices and infusion

For 4 servings bloom 1 pinch saffron in 40 ml food-grade rosewater. Divide Bzar as 1 tbsp fish + 0.5 tbsp rice, turmeric as 0.5 tsp fish + 0.5 tsp rice, salt as 1 tsp parboiling water + 0.5 tsp fish, and ghee as 3 tbsp onions/fish + 1 tbsp finishing. 2. Prepare rice while fish stays chilled

Keep fillets refrigerated at 4°C or colder, without spray-rinsing. Rinse rice and soak according to its packet in separate water, then drain and discard that water. Slice onions and mince garlic with clean tools; prepare a probe thermometer.

  3. Parboil rice, then discard water

Bring 1500 ml water to a boil with the reserved 1 tsp salt. Add drained rice and boil uncovered about 6 minutes, following packet and texture checks until partly cooked with a firm centre. Drain completely and discard all parboiling water; it is not a retained steaming allowance. Have rice ready before searing fish.

  4. Sear fish and proceed directly

Season fillets with reserved 1 tbsp Bzar, 0.5 tsp turmeric and 0.5 tsp salt. Heat 3 tbsp ghee over medium-high heat in a heavy pot and sauté onions and garlic until golden. Move onions aside and sear fish about 2 minutes per side. Immediately proceed to layering; do not hold or cool partially cooked fish.

Cover with an ordinary non-airtight lid and steam on the lowest heat about 20 minutes, continuing as needed for tender rice and fully cooked fish.

  6. Check fish centres before serving

Probe through rice into several thick fish centres without contacting bone: at least 63°C, with opaque flesh that flakes easily. Rice must have no hard centres. Continue cooking as needed, then serve promptly with clean utensils.
