Instructions

  1. Mix the thin batter

Whisk 1 cup flour (240 ml volume), 1 tsp sugar and 0.5 tsp yeast with 240 ml warm water into a smooth thin batter. Follow the yeast label for water temperature. Do not taste raw flour batter.

  2. Rest and protect the filling

Cover batter and begin checking after 30 minutes for small surface bubbles. Meanwhile keep 120 ml prepared pasteurized Ashta or thick clotted cream refrigerated at ≤4°C. This filling is already ready to eat, not an unlisted homemade cream recipe or plain liquid whipping cream.

    Check Asafiri batter: 1800 seconds

  3. Heat a dry non-stick pan

Heat a dry nonstick skillet over medium heat without oil. Spoon about 1 tbsp batter per approximately 5 cm circle, leaving room between pancakes. Piece count depends on batter and spoon size; use all batter rather than promising a fixed count.

  4. Cook fully on one side

Cook on one side only and begin checking at 2 minutes. Let bubbles open and the upper surface dry completely; adjust heat and continue until the whole thin pancake is cooked with no wet or raw batter. Do not flip; time and the first bubbles alone do not prove readiness.

  5. Shape while pliable, then cool

Lift onto a clean plate without flipping. When safe to handle but still warm and pliable, pinch half the circular edge together to make an open cone. Protect briefly with a clean cover; do not leave a deep damp stack waiting. Let shells cool briefly before adding cold cream.

  6. Divide the cold cream

Divide all 120 ml prepared cold Ashta or clotted cream among the cooled cones. Pipe or spoon into the open pockets using clean utensils. Keep unused cream refrigerated and promptly chill filled pastries; do not warm the dairy filling in hot shells.

  7. Finish and serve cold

Divide all 2 tbsp ready-to-eat crushed pistachios across the exposed cream tops. Drizzle the total 2 tbsp honey among all pieces just before serving cold. Do not give honey to infants under 12 months.

  8. Keep filled pastries chilled

Refrigerate filled pastries promptly within one hour at ≤4°C. Use within 24 hours from preparation, including chilling. Eight portions use four times all ingredients in equivalent cooking batches, not four-times-thicker pancakes. Keep the cream cold during assembly.
