Qamar al-Din Cooler
Chilled Egyptian apricot-sheet drink scented lightly with orange-blossom water.

Ingredients
- 250 g qamar al-din apricot leather — Cut into small pieces; check package for sulfites.
- 750 ml water — Use potable cold water.
- 30 g sugar (optional) — Up to 30 g, only if needed after tasting.
- 5 ml orange blossom water (optional) — Use just 5 ml; too much overwhelms the apricot.
- 100 g ice — Use clean ice made from potable water.
Instructions
Measure the drink ingredients
Measure 250 g qamar al-din apricot leather, 750 ml cold potable water and 100 g clean ice. Set aside up to 30 g sugar and 5 ml orange blossom water; these are optional and will be added after tasting.
Cut the apricot sheet
Cut the apricot sheet into small pieces so it softens evenly. Use a clean knife and bowl; check the package for sulfites if relevant to an allergy or sensitivity.
Cover with cold water
Put the apricot pieces in the bowl and pour all 750 ml cold water over them. Stir once to submerge every piece, then cover the bowl.
Soak in the refrigerator
Refrigerate the covered apricot and water for about 4 hours, or until the pieces are very soft. Keep the bowl at 4°C or colder; do not soak it for hours at room temperature.
Apricot pieces are very soft before blending.

Blend the softened apricot
Pour the softened apricot and all its soaking water into a blender. Blend for about 1 minute, stopping to scrape down the sides if needed, until smooth; do not heat the drink.

Strain and flavor
Pour the drink through a fine strainer into a clean pitcher to remove any tough pieces. Taste first, then stir in up to 30 g sugar only if needed and up to 5 ml orange blossom water for a light floral aroma.
Check sweetness and texture
Taste with a clean spoon: the drink should be smooth, pourable and apricot-forward, without hard pieces or undissolved sugar. Stir or strain again if needed; add no ingredients beyond those listed.

Serve cold over ice
Divide the 100 g clean ice among 4 glasses and pour the cold drink over it. Serve immediately. Cover and refrigerate any remaining drink at 4°C or colder within 2 hours; use within 2 days and stir before serving cold.
Tips
- Cut the apricot sheet small and soak it covered in the refrigerator until fully soft; the soaking time is a texture check, not cooking.
- Taste before sweetening: qamar al-din sheets vary in sweetness, and just a few millilitres of orange blossom water are enough.
Common mistakes
- Adding a large amount of orange blossom water masks the apricot; measure no more than 5 ml.
- Blending firm, insufficiently soaked pieces leaves a gritty drink; wait until very soft and strain if needed.
Substitutions
- If orange blossom water is unavailable, omit it; do not replace it with orange-blossom petals or a large volume of floral water. Use authentic qamar al-din apricot sheets for the characteristic flavor.
Storage
Cover and refrigerate the finished drink at 4°C or colder within 2 hours. Use within 2 days; stir before serving cold.
Reheating
Do not reheat; this is a chilled drink. Stir and serve cold over fresh clean ice.
