- 50 g Canned chickpeas, drained rinsed weight
- 20 g Raisins
- 150 g RAW peeled onion, sliced
- 1 tbsp Commercial food-grade Bezar spice blend; check label
- 30 ml Ghee, 20 ml topping + 10 ml meat browning

- 500 ml Hot poaching-water top-up, maximum (optional)
- 300 ml STRAINED RECOVERED cooking broth for rice, NOT additional water
- 500 ml Rice-rinsing water, discarded
- 750 ml Cold rice-soaking water, discarded
- 100 ml Hot rice-cooking water reserve, maximum (optional)
- 250 ml Chickpea-rinsing water, discarded
Instructions
Rinse and soak rice
Rinse rice with its 500 ml water and discard it. Soak in the separate 750 ml cold water for 20 minutes refrigerated at 4°C or colder, then drain. Rinse canned chickpeas in their 250 ml water and drain to the listed weight.
Refrigerated rice soak: 1200 seconds
Prepare the spiced cooking water
Bring 1500 ml fresh water to a boil with cardamom, cinnamon and all the salt. Keep raw lamb chilled until needed; use separate raw-food utensils. Divide whole spices proportionally for smaller portions and remove their pieces later.
Cook meat fully
Add the lamb, skim and simmer gently. Check from 90 minutes: lamb must be fork-tender and reach at least 63°C followed by a 3-minute rest. Extend cooking as needed, using only the listed 500 ml hot top-up if needed. Keep fully cooked meat at 60°C or above during the brief rice preparation; never hold partly cooked meat on the counter.
Meat cooking first check: 5400 seconds
Measure recovered broth
Strain the hot cooking liquid safely, remove whole spices and measure exactly 300 ml for rice. This is recovered liquid, not another water addition. Set aside excess broth; do not pour it all onto the rice.
Make topping and brown meat
Soften onion in 20 ml of the total 30 ml ghee until golden, then add drained chickpeas and raisins and heat through. Hold topping hot. Brown the already fully cooked meat with Bezar in the remaining 10 ml ghee, checking from 3 minutes; keep it hot.
Meat browning first check: 180 seconds
Simmer rice gently
Add drained rice and the measured 300 ml recovered broth. Bring just to a simmer, cover with a normal fitted lid and cook on low. Check from 15 minutes for tender grains; add only the optional 100 ml hot rice-water reserve as needed. Do not boil dry or use a liquid-depth rule.
Rice cooking first check: 900 seconds
Rest and assemble hot
Rest covered off heat for 5 minutes. Fluff gently and assemble with fully hot meat and onion-chickpea-raisin topping. Check the meat/rice assembly to the selected 74°C household target without probing bone. Serve promptly; this does not replace the earlier separate meat doneness check.
Covered rice rest: 300 seconds
Serve and cool leftovers promptly
Cool rice dishes rapidly in shallow portions, ideally within 1 hour, and refrigerate at 4°C or colder for at most 24 hours. Do not cool in the heavy pot. Reheat only once to 74°C throughout. Follow earlier component deadlines.
Tips
- Base amounts make 2 catalogue shares, separate from skewer or small-cup yields. For 1 share halve every measured ingredient and process-water allowance; for 8 shares multiply by 4. Cup = 240 ml, tbsp = 15 ml, tsp = 5 ml. Keep cooking temperature, food thickness and vessel depth unchanged; use successive comparable-size batches, not multiplied cooking times. Timers are first checks, not guarantees. Follow actual cooking and allergen labels.
Common mistakes
- Do not rely on a fixed timer or surface colour alone. Keep the measured ingredient allocations and use the stated doneness checks.
Substitutions
- Use the specified ingredient states and equipment; reconcile another product before changing liquid or cooking method.

Reheating
Reheat only once to 74°C throughout, stirring where practical. Discard temperature-abused food; reheating cannot rescue it.
