  1. Set up the cold station

    Wash hands and clean the work surface, fruit knife, board, six serving bowls, and ice-shaver parts. Keep milk, condensed milk, sweet beans, rice cake, and ice cream at 4°C or colder. Use only potable water for the ice.

  2. Prepare the fruit and toppings

    Wash and dry the fruit before cutting. Hull and quarter the strawberries; peel, pit, and dice the mango into 1 cm pieces. Cut the injeolmi into 1 cm pieces with a clean knife. If serving young children, older adults, or anyone with swallowing difficulty, omit the chewy rice cake.

  3. Portion the cold ingredients

    Divide the sweet red beans, fruit, rice cake, milk, and condensed milk into six equal portions so assembly is fast. Keep every portion refrigerated. Keep ice cream frozen and soybean powder sealed until needed.

  4. Chill the serving bowls

    Place the six empty serving bowls in the refrigerator or freezer. Start the preserved 30-minute timer. Chill for 30 minutes so the shaved ice melts more slowly; this timer is for bowl chilling, not cooking or doneness.

    Bowls feel thoroughly cold; there is no cooking stage.

  5. Shave the ice and build the dessert

    Following the appliance instructions, shave potable ice immediately before serving. Never put fingers or utensils near moving blades; unplug the machine before clearing a jam. Put 100 g shaved ice in each chilled bowl, add one portion each of beans, milk, fruit, and rice cake, then mound another 50 g ice on top. Drizzle with condensed milk and add optional ice cream and soybean powder.

  6. Check texture and balance

    The ice should be fine and snow-like, the beans soft and spoonable, the fruit cold and fresh, and the rice-cake pieces small and soft. Taste one spoonful containing ice, beans, and milk; add condensed milk only if more sweetness is needed. If the ice is coarse, shave it again rather than adding hard chunks.

  7. Serve immediately and store components

    Serve all six bowls immediately with spoons and mix the layers while eating. Do not store assembled or melted patbingsu. Discard any dairy-containing bowl left above 4°C for more than 2 hours. Refrigerate unused beans, milk, condensed milk, cut fruit, and rice cake separately in sealed containers.
