Clear kingfish broth with ginger, turmeric, fresh lime and dried lime.

Preparation: 15 min · Cooking: 25 min · Total: 45 min · 2 servings
Ingredients
- 250 g RAW boneless kingfish cubes, about 2 cm; Scomberomorus commerson
- 150 g RAW peeled onion, sliced
- 1 tsp Ground turmeric
- Whole dried lime — 1
- 750 ml Initial soup water, not a final yield promise
- Peeled garlic cloves, crushed — 3
- 30 ml Fresh lime juice
- 15 ml Vegetable oil, total measured allowance
- 10 g Fresh peeled ginger, grated
- 1 tsp Optional salt, maximum (optional)
- 150 ml Hot soup-water top-up, maximum (optional)
Instructions
Prepare chilled fish
Keep supplier-labelled boneless kingfish cubes at 4°C or colder until needed. Use separate raw-fish utensils and check for remaining bones. This master uses kingfish, not an unspecified tuna substitute.
Prepare aromatics and dried lime
Slice onion, crush garlic and grate peeled ginger. Gently pierce dried lime on a stable board with fingers clear, never in the palm. Remove hard loose fragments.
Soften aromatics
Warm all 15 ml oil over medium-low heat and soften onion, garlic and ginger, checking from 3 minutes without burning. Stir in all the turmeric briefly.
Aromatics first check: 180 seconds
Simmer the clear broth
Add 750 ml initial water and the pierced dried lime. Simmer gently from 10 minutes under a normal fitted lid partly ajar. Use only the optional 150 ml hot reserve if evaporation requires it; do not promise a fixed finished volume.
Broth first check: 600 seconds
Cook fish gently
Add chilled fish cubes and simmer gently, checking from 8 minutes until several thick pieces reach 63°C. Do not rely on time or surface colour alone and do not boil vigorously enough to break the fish.
Fish first check: 480 seconds
Finish with fresh lime
Stir in all 30 ml fresh lime juice. If desired, add from the optional 1 tsp salt maximum, without an unmeasured second addition. Remove the whole dried lime and loose pieces before serving.
Serve clear soup
Ladle carefully into bowls with fish divided evenly. No coconut milk, green chilli, extra lime wedges or rice is included in this master. A separate rice accompaniment needs its own 1-hour rapid-cooling and 24-hour refrigerated-storage rule.
Cool shallow leftovers promptly
Refrigerate shallow portions promptly at 4°C or colder within 2 hours, or 1 hour above 32°C. Keep at most 2 days, or an earlier ingredient deadline. Do not store in a deep cooking pot.
Tips
- Base amounts make 2 catalogue shares, separate from skewer or small-cup yields. For 1 share halve every measured ingredient and process-water allowance; for 8 shares multiply by 4. Cup = 240 ml, tbsp = 15 ml, tsp = 5 ml. Keep cooking temperature, food thickness and vessel depth unchanged; use successive comparable-size batches, not multiplied cooking times. Timers are first checks, not guarantees. Follow actual cooking and allergen labels.
- Use supplier-labelled kingfish (Scomberomorus commerson), kept cold. Cooking does not remove histamine already formed through poor cold storage. Follow local species-specific advice; no low-mercury claim is made.
Common mistakes
- Do not rely on a fixed timer or surface colour alone. Keep the measured ingredient allocations and use the stated doneness checks.
Substitutions
- Use the specified ingredient states and equipment; reconcile another product before changing liquid or cooking method.
Storage
Refrigerate shallow portions promptly at 4°C or colder within 2 hours, or 1 hour above 32°C. Keep at most 2 days, or an earlier ingredient deadline. Do not store in a deep cooking pot.
Reheating
Reheat only once to 74°C throughout, stirring where practical. Discard temperature-abused food; reheating cannot rescue it.
