  1. Measure and chill the dairy

    Set out enough feijoas to yield 400 g flesh. Measure 250 g plain pasteurized yoghurt, 1 ripe banana, 250 ml pasteurized milk and 1 tsp honey. Keep the yoghurt and milk refrigerated until blending.

    Ingredients are measured and dairy is cold.

  2. Wash and scoop the feijoas

    Wash the feijoas under running water. Halve them and scoop out the flesh with a spoon until you have 400 g; discard the skins. Put the flesh in a clean blender jug.

    400 g flesh is free of skins.

  3. Peel and cut the banana

    Peel the 1 ripe banana and cut it into pieces. Add all the pieces to the feijoa in the blender.

    Banana is peeled and in small pieces.

  4. Blend the fruit and dairy

    Add the 250 g yoghurt and 250 ml milk to the blender. Blend for 30–60 seconds until no large fruit pieces remain and the drink is smooth.

    Smoothie is pourable with no large fruit pieces.

  5. Add the honey

    Add the 1 tsp honey and blend for another 5–10 seconds until evenly mixed. Taste with a clean spoon; the drink should be lightly sweet and tangy.

    Honey is fully distributed.

  6. Chill briefly

    Cover the blender jug and refrigerate the smoothie for 10 minutes until cool. Do not heat it; this is a cold drink.

    Drink is cool, not warm.

    Chill 10 minutes: 600 seconds

  7. Pour and serve

    Stir once and divide the chilled smoothie equally between 4 glasses. Serve immediately while smooth; return any unused portion to the refrigerator promptly.

    Four glasses contain smooth, chilled smoothie.

Storage

Serve freshly blended. Cover and refrigerate at 4°C or below for up to 24 hours; stir before serving. Discard if left out for more than 2 hours, or more than 1 hour above 32°C.

Reheating

Serve cold; do not reheat this yoghurt smoothie.
