New Zealand Blackcurrant Cordial
A New Zealand-style blackcurrant syrup simmered with lemon and diluted into four chilled drinks.

Ingredients
- 400 g blackcurrants, fresh or thawed
- 100 g white sugar
- 750 ml drinking water
- 1 pc lemon, washed
Instructions
Wash and measure
Wash 400 g fresh blackcurrants, or thaw and drain frozen ones. Measure 100 g sugar and 750 ml drinking water. Wash 1 lemon. Set out a saucepan, a fine sieve and a heatproof jug.
Fruit is clean and the water is measured.
Juice the lemon
Cut the washed lemon and squeeze out its juice. Remove any seeds; keep the juice for the simmering syrup.
Juice has no seeds.
Dissolve the sugar
Put the 100 g sugar and 300 ml of the measured water in the saucepan. Stir over medium heat for about 2 minutes until no sugar crystals remain; do not let the syrup scorch.
Sugar is fully dissolved.
Simmer the blackcurrants
Add the 400 g blackcurrants and all the lemon juice. Bring to a gentle simmer over medium heat, then cook for 8–10 minutes, stirring occasionally, until the berries burst and the liquid is deep purple.
Berries have burst and syrup is deep purple.
Check berries after 8 minutes: 480 seconds
Strain the syrup
Set a fine sieve over the heatproof jug. Carefully pour the hot mixture through it and let it drain; press gently with a spoon to extract liquid without pushing many seeds through. Discard the pulp and seeds.
Liquid is strained without visible seeds.
Chill the cordial
Cover the syrup loosely until steam subsides, then refrigerate it in the heatproof jug for about 45–60 minutes until cold. Do not leave it on the counter to cool completely.
Syrup is cold.
Dilute and serve
Divide the chilled syrup between 4 glasses. Add the remaining 450 ml water evenly (about 112 ml per glass), stir and serve cold. The drink should be smooth, tangy and sweet; keep any unused syrup refrigerated.
Four glasses are evenly diluted and smooth.
Tips
- The 750 ml water is split: 300 ml for the syrup and 450 ml for dilution.
Common mistakes
- Do not boil hard after adding fruit; a gentle simmer prevents scorching.
- Do not bottle or store this cordial at room temperature as if it were preserved.
Substitutions
- Frozen blackcurrants may replace fresh ones after thawing and draining; keep the same 400 g weight.
Storage
Keep the undiluted syrup covered at 4°C or below for up to 3 days; refrigerate within 2 hours of cooking. Diluted drinks are best served immediately.
Reheating
Serve cold; do not reheat. If the syrup has been left at room temperature more than 2 hours, discard it.
