Preparation: 20 min · Cooking: 35 min · Total: 1 hr 30 min · 4 servings
Ingredients
- 500 g dry basmati rice
- 1.5 tsp ground cardamom
- 3 tbsp ghee, total divided allowance — 1.5 tbsp lower layer + 1.5 tbsp upper layer.
- 150 ml date syrup
- 1500 ml parboiling water, completely discarded
- 30 ml food-grade rosewater
- 1 pinch saffron threads
- whole cloves — 3
- cinnamon stick — 1
- separate rice rinsing and soaking water, discarded
Instructions
Measure the two equal layer allowances
Use 500 g dry rice, 150 ml date syrup, 30 ml rosewater, 1 pinch saffron and 1.5 tsp cardamom. Divide 3 tbsp ghee as 1.5 tbsp for each layer; at fourfold 6 + 6 tbsp. The 1500 ml parboiling water is discarded, not retained steaming liquid.

Rinse and soak rice separately
Rinse rice and soak according to its packet in separate drinking water. Drain and discard all soaking water. Prepare the whole cloves and cinnamon stick so they can be removed before serving.

Parboil with whole spices, then drain
Bring 1500 ml water to a rolling boil with whole cloves and cinnamon. Add soaked drained rice and boil uncovered about 7–8 minutes until softened outside but still firm within. Follow the rice packet and check texture rather than treating time as exact. Drain completely and discard the parboiling water.

Parboil with whole spices, then drain: 420 seconds
Mix sweetness, layer and steam
Whisk date syrup, rosewater, saffron and cardamom together. Put half the drained rice in the pot with half the sweet mixture and 1.5 tbsp ghee. Add remaining rice, remaining mixture and final 1.5 tbsp ghee. Make 3 steam channels with a spoon handle. Cover with an ordinary non-airtight lid and steam on very low heat about 20–25 minutes until grains are fully tender.

Mix sweetness, layer and steam: 1200 seconds
Check tenderness and remove whole spices
Check several rice grains: no hard centres should remain; continue steaming if needed. Remove cinnamon and whole cloves as practical before serving. Serve hot; any fish is a separately prepared optional side, not an unlisted required ingredient. Continue steaming on low heat until every grain is tender if needed.

Do not leave rice lukewarm
Use clean tools to divide leftover rice promptly into shallow containers. Refrigerate within 1 hour at 4°C or colder without waiting for the pot to cool to room temperature.

Tips
- Amounts and divided allowances in the instructions describe the base batch. Scale them with the ingredients, not the timer durations. Use appropriately sized pots or several comparable batches for a larger yield.
Common mistakes
- Do not use a timer, colour or aroma alone as proof of readiness; follow the stated texture and temperature checks.
Substitutions
- The approved measured sweetener is 150 ml date syrup, not unmeasured cane sugar or whole dates. Fish may be served separately as an optional accompaniment; it is not required or part of this ingredient budget.
Storage

Reheating
Reheat at most once to 74°C throughout, checking several centres including rice, bread or pastry where present. Reheating does not repair unsafe storage.
