Omani Beef Mishkak — Home-Oven Adaptation
Sirloin with Bezar and white vinegar, cooked on six evenly filled oven skewers.

Preparation: 20 min · Cooking: 17 min · Total: 6 hr 50 min · 2 servings
Ingredients
- 300 g RAW whole-muscle sirloin, approximately 2 cm cubes
- 30 ml Food-grade 5% distilled white vinegar
- 1 tsp Commercial food-grade Bezar spice blend; check label
- 1 tsp Salt
- Food-safe wooden skewers rated for the stated oven temperature — 6
- 1000 ml Cold skewer-soaking water, discarded
Instructions
Prepare oven-rated skewers
Use six food-safe wooden skewers explicitly rated for 220°C and follow their maker's soaking and use instructions. Set them in the listed 1000 ml cold water; the source 30-minute soak is not a guarantee against burning. Discard the soak water. If not rated for this oven heat, do not use them.
Skewer soak, follow maker: 1800 seconds
Mix marinade with chilled cubes
Mix all the listed marinade ingredients and coat the approximately 2 cm protein cubes. Keep at 4°C or colder and use separate raw-food tools. Use whole-muscle beef; follow stricter supplier directions for tenderized or injected meat.
Marinate refrigerated
Cover and marinate refrigerated at 4°C or colder for 360 minutes (6 hours). Discard used raw marinade after threading; do not serve it uncooked.
Refrigerated marinade: 21600 seconds
Divide evenly and preheat
Preheat a conventional oven to 220°C. Divide 300 g cubes evenly across six skewers, about 50 g raw protein per skewer, without forcing a fixed cube count. Half batch: three skewers; fourfold: 24 skewers. Keep cube thickness unchanged and cook in uncrowded comparable-size batches.
Roast over a drip tray
Put skewers on an oven-rated wire rack over a foil-lined oven-rated drip tray; keep handles away from elements. Roast at 220°C, turn carefully around 6 minutes, and make the first doneness check from 12 minutes. Watch wooden ends and stop if they scorch; no unlisted oil is added.
Oven first check: 720 seconds
Check thickest pieces
Probe several thick pieces without touching the skewer: at least 63°C followed by a 3-minute rest. Continue cooking if needed; surface colour is not enough.
Whole-beef rest: 180 seconds
Serve with clean utensils
Move cooked skewers with clean tongs onto a clean plate. Warn diners that skewers are hot; remove pieces carefully. Serve promptly. Bread, sauces and garnishes are separate and not included in these quantities.
Cool leftovers promptly
Refrigerate shallow portions promptly at 4°C or colder within 2 hours, or 1 hour above 32°C. Keep at most 2 days, or an earlier ingredient deadline. Do not store in a deep cooking pot.
Tips
- Base amounts make 2 catalogue shares, separate from skewer or small-cup yields. For 1 share halve every measured ingredient and process-water allowance; for 8 shares multiply by 4. Cup = 240 ml, tbsp = 15 ml, tsp = 5 ml. Keep cooking temperature, food thickness and vessel depth unchanged; use successive comparable-size batches, not multiplied cooking times. Timers are first checks, not guarantees. Follow actual cooking and allergen labels.
Common mistakes
- Do not rely on a fixed timer or surface colour alone. Keep the measured ingredient allocations and use the stated doneness checks.
Substitutions
- Use the specified ingredient states and equipment; reconcile another product before changing liquid or cooking method.
Storage
Refrigerate shallow portions promptly at 4°C or colder within 2 hours, or 1 hour above 32°C. Keep at most 2 days, or an earlier ingredient deadline. Do not store in a deep cooking pot.
Reheating
Reheat only once to 74°C throughout, stirring where practical. Discard temperature-abused food; reheating cannot rescue it.
