Milanesa Napolitana
Argentine breaded beef cutlets topped with tomato sauce, ham and melted mozzarella.

Ingredients
- 600 g thin beef top-round cutlets — Four thin cutlets, about 5 mm thick after pounding.
- 160 g plain breadcrumbs — Plain; contains wheat.
- 180 ml tomato sauce — Use a thick, ready-to-eat sauce.
- 250 g mozzarella — Grated or thinly sliced; milk allergen.
- 0.5 tsp dried oregano — Dried leaves.
- 80 g all-purpose flour — Contains wheat.
- 2 eggs — Egg allergen; beaten in a shallow bowl.
- 120 g cooked ham — Thinly sliced; check the label for allergens.
- 500 ml neutral frying oil — For 1 cm shallow frying depth, such as sunflower oil.
- 4 g fine salt — Divided across the cutlets.
- 0.5 tsp ground black pepper — Freshly ground if possible.
Instructions
Prepare the cutlets and coating station
Heat an oven grill to high and place a rack 10 cm below it. Pat the beef cutlets dry and, if needed, cover them with baking paper and gently pound to an even 5 mm thickness. Season both sides with salt and pepper. Set up three shallow bowls in order: flour; beaten eggs; breadcrumbs mixed with oregano. Keep the raw-beef board, knife and egg bowl separate from ready-to-eat ham, cheese and cooked cutlets.
Bread the beef cutlets
Coat one cutlet at a time in flour and shake off excess. Dip in egg, letting excess drip back into the egg bowl, then press into the breadcrumbs until fully coated. Put breaded cutlets on a clean tray in one layer. Discard flour, egg and crumbs that touched raw beef; wash hands and surfaces before touching the ham, mozzarella or tomato sauce.
Heat oil and begin the retained cooking timer
Pour the oil into a wide skillet to a depth of about 1 cm and heat it over medium-high heat to 175–180°C. Start the retained 42-minute timer as the complete frying-and-grilling window. If oil smokes, turn off the heat and let it cool; never add water to hot oil. Fry in batches so the pan is not crowded.
Fry the milanesas and add the Napolitana topping
Fry two cutlets at a time for 2–3 minutes per side until deep golden and crisp. Transfer them with tongs to a wire rack over a baking sheet. Spoon tomato sauce evenly over each fried cutlet, add ham, then cover with mozzarella. Keep toppings away from the hot oil and do not return cooked cutlets to the raw-meat tray.
Fry and grill milanesa: 2520 seconds
Finish under the oven grill
Place the topped cutlets under the hot grill for 2–4 minutes, watching continuously, until the mozzarella is melted, bubbling and lightly spotted brown. Move the tray with dry oven gloves. Do not use a loose tea towel near the grill or hot oil.
Check doneness and handle hot oil safely
Check the thickest cutlet with a clean thermometer: the centre must reach at least 63°C and show no raw-looking red centre. The coating should be crisp, the sauce hot and the cheese fully melted. If any cutlet is below 63°C, return it to the oven for 1–2 minutes and check again. Turn off the burner and let frying oil cool completely in the pan before straining or discarding it according to local guidance.
The thickest beef cutlet reaches at least 63°C with no raw-looking red centre; the coating is crisp, sauce hot and mozzarella fully melted.
Serve and store safely
Rest the cutlets for 2 minutes, then serve one per plate while the coating is crisp. Refrigerate leftovers in shallow covered containers within 2 hours and use within 2 days. Reheat once in a 200°C oven until the centre reaches 74°C; microwaving will soften the coating.
Tips
- Pounding the beef evenly is more important than making it very thin: it lets the cutlet brown before the breadcrumb coating burns.
- Use a wire rack after frying so steam does not soften the bottom crust.
Common mistakes
- Crowding the pan drops the oil temperature and makes the breading greasy.
- Putting tomato sauce on before frying makes the coating soggy; fry first, then top and grill.
- Leaving the grill unattended can burn the cheese quickly.
Substitutions
- Use thin chicken breast cutlets instead of beef only if they are cooked to 74°C before serving.
Storage
Refrigerate in shallow covered containers within 2 hours and use within 2 days.
Reheating
Reheat once in a 200°C oven until the centre reaches 74°C.
