Meshabek with Honey
Thin yeast-batter lattices fried in controlled oil and dipped in honey or prepared syrup.

Preparation: 15 min · Cooking: 20 min · Total: 1 hr 35 min · 2 servings
Ingredients
- 1 tsp instant yeast
- 480 ml initial vegetable frying oil allowance, not all absorbed
- 1 cup all-purpose flour, measured by volume
- 1 tsp cornstarch
- 180 ml warm water, temperature per yeast label
- 240 ml honey or prepared thick sugar syrup, dipping allowance
- conditional additional vegetable frying oil for the vessel
Instructions
Mix the batter
Whisk 1 cup flour (240 ml volume), 1 tsp cornstarch and 1 tsp instant yeast with 180 ml warm water until smooth and pourable. Water temperature follows the yeast label. Do not taste raw batter.

Ferment until bubbly
Cover the bowl and begin checking fermentation after 1 hour. Surface bubbles and an aerated pourable texture indicate readiness; room conditions and yeast can change the time. Do not promise an exact number of nests from this batter.

Prepare safe frying depth
Use a suitable deep pot or fryer with 480 ml initial oil and conditional additional oil for safe frying depth. Keep oil below half the pot height and its labelled safe fill; even a half batch may need extra oil. Heat under thermometer control to 180°C, not smoking.

Pipe thin lattices
Transfer batter to a food-safe squeeze bottle or piping bag suitable for the operation. Keep hands and container clear of the hot oil. Pipe thin overlapping circles into manageable nests in small batches; do not crowd the pot.

Fry through, not just golden
Maintain oil at about 180°C and begin checking after 2 minutes per side. Turn carefully and continue until the thin lattice is crisp and fully cooked through without wet dough. Exterior colour and a fixed time alone are insufficient.

Drain and dip
Lift out with a suitable utensil and drain briefly on clean paper. Dip the hot cooked lattice in the 240 ml room-temperature honey or prepared thick syrup for about 1 minute. Let excess drip off; the whole dipping allowance is not necessarily eaten.

Serve freshly made
Serve warm once safe to handle. Continue with the remaining batter in controlled batches without adding unlisted sesame. Honey must not be served to infants under 12 months.

Store only briefly
Best eaten fresh. If keeping leftovers, refrigerate shallow portions within one hour at ≤4°C and use within two days. Texture will soften; reheat at most once to 74°C throughout if reheating.

Tips
- Instruction quantities describe the original two-serving batch. Ingredient controls scale the list to one or eight servings. One cup is 240 ml; tablespoon 15 ml and teaspoon 5 ml. Volumes are not gram weights. Use equivalent vessels/batches when scaling.
Common mistakes
- Do not add inherited draft ingredients or treat appearance and fixed times as the only cooking checks.
Substitutions
- Use the listed ingredient states and alternatives. Check product directions and allergens; unlisted replacements may change handling and storage.
Storage
Refrigerate promptly within one hour in shallow portions at ≤4°C. Use within two days from preparation, including setting/chilling. These are conservative household limits, not a validated shelf life.
Reheating
Reheat at most once to 74°C throughout. Reheating cannot rescue food that was stored improperly.
