Omani Mashuai Kingfish — Oven Steaks
Lemon, garlic and cumin kingfish steaks roasted on a measured-oil tray.

Preparation: 15 min · Cooking: 20 min · Total: 50 min · 2 servings
Ingredients
- Peeled garlic cloves, crushed — 4
- 1 tsp Ground cumin
- 400 g RAW kingfish steaks, about 2 cm; Scomberomorus commerson
- 30 ml Fresh lemon juice
- 1 tsp Salt
- 10 ml Vegetable oil, total measured allowance
Instructions
Prepare fish and equipment
Choose the listed supplier-labelled kingfish steaks, about 2 cm thick. Check for bones, keep chilled and use separate raw-fish tools. Set out an oven-rated tray and thermometer.
Mix marinade
Mix all 30 ml lemon juice with crushed garlic, cumin and salt. Coat fish evenly; no unlisted coriander or rice is included.
Marinate refrigerated
Cover and marinate at 4°C or colder for 15 minutes. Discard used raw marinade after placing fish on the tray; never use it as an uncooked serving sauce.
Refrigerated fish marinade: 900 seconds
Preheat and oil tray
Preheat a conventional oven to 200°C. Coat the oven-rated tray with all 10 ml oil. Arrange steaks in one layer with space between them; do not add hidden basting oil.
Roast to the core target
Roast at 200°C and check from 15 minutes. Measure thickest flesh away from bone to 63°C; continue as needed. Surface colour or the timer alone does not confirm doneness.
Roast first check: 900 seconds
Optional watched browning
Only if colour needs improvement, broil briefly for up to 2 minutes while watching constantly. Keep the tray rated for this heat and stop before burning. This optional step does not replace the 63°C core check.
Transfer with clean utensils
Transfer cooked steaks with clean utensils, taking care with remaining bones. Serve promptly without a mandatory red-meat rest. Any rice or chickpea side is separate and not part of these quantities.
Cool leftovers promptly
Refrigerate shallow portions promptly at 4°C or colder within 2 hours, or 1 hour above 32°C. Keep at most 2 days, or an earlier ingredient deadline. Do not store in a deep cooking pot.
Tips
- Base amounts make 2 catalogue shares, separate from skewer or small-cup yields. For 1 share halve every measured ingredient and process-water allowance; for 8 shares multiply by 4. Cup = 240 ml, tbsp = 15 ml, tsp = 5 ml. Keep cooking temperature, food thickness and vessel depth unchanged; use successive comparable-size batches, not multiplied cooking times. Timers are first checks, not guarantees. Follow actual cooking and allergen labels.
- Use supplier-labelled kingfish (Scomberomorus commerson), kept cold. Cooking does not remove histamine already formed through poor cold storage. Follow local species-specific advice; no low-mercury claim is made.
Common mistakes
- Do not rely on a fixed timer or surface colour alone. Keep the measured ingredient allocations and use the stated doneness checks.
Substitutions
- Use the specified ingredient states and equipment; reconcile another product before changing liquid or cooking method.
Storage
Refrigerate shallow portions promptly at 4°C or colder within 2 hours, or 1 hour above 32°C. Keep at most 2 days, or an earlier ingredient deadline. Do not store in a deep cooking pot.
Reheating
Reheat only once to 74°C throughout, stirring where practical. Discard temperature-abused food; reheating cannot rescue it.
