Ingredients

Instructions

  1. Prepare chilled fish and clean tools

Use commercially supplied cleaned butterflied carp from a maintained cold chain. Keep at 4°C or colder until needed; separate raw-fish utensils from cooked-food tools. Base fish is about 1.2 kg reference size including bones; half is half that same fish, fourfold four similar fish.

  2. Measure derived onion juice

Grate and strain enough fresh onion to collect 60 ml juice for the base batch, measured AFTER straining. Do not assume one onion yields that volume or dilute with water. Keep the separately listed half small sliced topping onion distinct; pulp is not forced into the sauce.

  3. Season and baste while kept cold

Apply measured salt and the mixture of measured onion juice and turmeric. Keep waiting fish covered and refrigerated at 4°C or colder. Do not add unlisted Amba spice or use raw-contact basting fluid as an uncooked finishing sauce.

  4. Prepare an outdoor grill and rated basket

Use a secure manufacturer-rated grilling basket and support, with suitable gloves and tools. Prepare a manufacturer-supported indirect-heat zone on an OUTDOOR charcoal grill. Never use charcoal indoors, in a garage or enclosed shelter; no improvised vertical 30 cm rack, trench or spikes are prescribed.

  5. Grill over controlled indirect heat

Secure fish in the compatible basket and cook on the supported indirect zone. Begin checks around 25 minutes, adjusting for actual fish size and conditions rather than a universal distance from embers.

Grill over controlled indirect heat: 1500 seconds

  6. Monitor the skin-side finish

Move and turn only with secure support and suitable tools for a monitored skin-side finish. Begin checks around 5 minutes, avoiding flare-ups or deliberate black charring. Follow basket handling instructions.

Monitor the skin-side finish: 300 seconds

  7. Prepare clean tomato glaze and topping

With fresh clean utensils, mix 1 tbsp tomato paste with the separate 30 ml glaze water for the base batch. Half water is 15 ml and fourfold 120 ml. Apply the fresh glaze and washed sliced tomatoes/onion; do not reuse raw-fish-contact onion marinade.

  8. Finish vegetables and verify fish temperature

Continue over controlled heat, checking from another 5 minutes until vegetables are cooked as intended and fish reaches 63°C in thick edible parts away from bone. Times, colour and a 30 cm distance are not thermal guarantees.

Finish vegetables and verify fish temperature: 300 seconds

  9. Serve with bone and hot-basket precautions

Open and handle the basket according to its instructions and serve hot, watching for bones and hard scales. The same outdoor adaptation applies at every scale; no high-flame toaster-oven shortcut or authenticated riverside smoking process is claimed.

  10. Store safely

Cool promptly in shallow portions and refrigerate, aiming within 1 hour, at 4°C or colder. Use within 24 hours. This is a selected conservative household limit, not a validated shelf life. Follow any shorter product use-by limit; keep cream separate until serving where possible.
