Ingredients
- medium tomatoes, diced — 2
- 200 g whole wheat flour
- 100 ml warm dough water
- 0.5 tsp salt for dough
- 500 g raw bone-in lamb chunks
- 500 g mixed potato, carrot and zucchini, combined weight
- 1200 ml water for stew
- medium onions, finely chopped — 2
- 2 tbsp tomato paste
- 1.5 tbsp Emirati Bezar spice blend
- 1 tsp ground turmeric
- dried black limes (loomi), pierced — 2
- 1 tsp salt for stew
- 2 tbsp ghee, total allowance
- conditional boiling-water top-up (optional)
- whole wheat flour for dusting, as needed
Instructions
Prepare measured allowances
Keep the two liquid and salt budgets separate: 100 ml dough water with 0.5 tsp salt, and 1200 ml stew water with 1 tsp salt. The 500 g mixed vegetable allowance is the combined weight of potato, carrot and zucchini; cut evenly and keep zucchini separate.
Prepare equipment and handling
Do not wash raw lamb or taste raw dough. Avoid cross-contamination. Check several thick lamb pieces away from bone to at least 71°C, the owner-chosen target, and continue until fork-tender. Dough must have no raw or chalky centres; check vegetables separately. A timer is not proof of readiness.
Knead Dough Base
Combine whole wheat flour, ½ tsp salt, and 100 ml water. Knead for 8 minutes into a stiff dough. (Do not taste raw dough). Cover and let rest for 30 minutes. Divide into 4 small balls.

Cook Lamb Stew
Heat ghee in a large pot. Sauté chopped onions until golden. Add tomatoes, tomato paste, Bezar, turmeric, 1 tsp salt, and pierced loomi. Toss in unwashed raw lamb chunks, sear, then pour in 1.2 L water. Bring to a boil, cover, and simmer for 1 hour.

Roll & Drop
Roll each dough ball out on a dusted surface until paper-thin. Cut into 5 cm squares. Drop dough squares one by one into the bubbling lamb stew while stirring gently to prevent them from sticking together. Add diced potatoes and carrots.
Simmer & Verify
Add zucchini after 10 minutes. Simmer gently for 25 minutes total until the dough is silky and the vegetables are tender, applying conditional boiling water top-ups if the liquid gets too short to maintain coverage. Verify with a thermometer that the lamb core hits at least 71°C (160°F). Cool in shallow containers, refrigerate within 1 hour at or below 4°C, and use within 24 hours. Reheat to 74°C at most once.

Cool and store
Divide perishable leftovers promptly into small shallow containers and refrigerate within 1 hour at or below 4°C. Use within 24 hours. Do not wait for a deep pot or full platter to reach room temperature.
Serve leftovers appropriately
If reheating, heat only the needed portion at most once to 74°C throughout. Stir or turn and thermometer-check several locations, including solid or dough centres. Reheating cannot repair improper storage; discard reheated leftovers.
Tips
- Selected ingredient amounts govern scaling. Numbers in the method describe the base batch: multiply allocations and piece counts in the same ratio. Use appropriately sized pots or multiple comparable pans/batches; timers do not multiply and never guarantee readiness.
Common mistakes
- Do not treat surface colour, a timer or a dry appearance as a guarantee of safe cooking. Follow the specific centre, texture and temperature checks.
Substitutions
- Follow the approved master ingredients and quantities; changes may require different liquid amounts or cooking methods. Optional garnishes may be omitted.
