Omani Kingfish Majboos
Basmati with Bezar and turmeric-seared kingfish steaks.

Preparation: 20 min · Cooking: 30 min · Total: 1 hr 10 min · 2 servings
Ingredients
- 200 g DRY basmati rice
- 200 g RAW kingfish steaks, about 2 cm; Scomberomorus commerson
- 300 ml Initial rice-cooking water
- 150 g RAW peeled onion, sliced
- 30 ml Vegetable oil, total measured allowance
- 1 tbsp Commercial food-grade Bezar spice blend; check label
- 1 tsp Ground turmeric
- 1 tsp Salt
- 500 ml Rice-rinsing water, discarded
- 750 ml Cold rice-soaking water, discarded
- 100 ml Hot rice-cooking water reserve, maximum (optional)
Instructions
Rinse and soak rice
Rinse rice with its 500 ml water and discard it. Soak in the separate 750 ml cold water for 20 minutes refrigerated at 4°C or colder, then drain.
Refrigerated rice soak: 1200 seconds
Season chilled fish
Keep fish at 4°C or colder until cooking. Coat the steaks with all the turmeric, half the 1 tbsp Bezar (0.5 tbsp) and half the 1 tsp salt (0.5 tsp). Reserve the remaining Bezar and salt for rice.
Sear fish fully
Use 15 ml of the total 30 ml oil to sear fish over medium heat. Check from 3 minutes per side and continue to 63°C in thickest flesh away from bone. Transfer with clean utensils and hold fully cooked fish at 60°C or above during the brief rice preparation; do not leave partly cooked fish waiting.
Fish sear first check: 360 seconds
Soften onion
In a separate pot soften onion in the remaining 15 ml oil. Stir in reserved 0.5 tbsp Bezar and 0.5 tsp salt briefly without scorching.
Add measured water and rice
Add drained rice and exactly 300 ml initial rice water. Bring just to a simmer. Use a normal fitted lid, not a pressure seal, and reduce heat to low.
Simmer and check grains
Cook covered on low, checking from 15 minutes until grains are tender. Add only from the optional 100 ml hot-water reserve if needed. Do not boil dry or estimate liquid by depth above the rice.
Rice first check: 900 seconds
Finish with hot fish
Put fully cooked hot fish on the tender rice for the final hot finish. Check rice and fish to the selected 74°C assembly target, then rest covered off heat for 5 minutes. This higher mixed-dish target does not change the separate 63°C fish minimum and does not impose a red-meat rest on fish.
Covered rice rest: 300 seconds
Serve and cool rice promptly
Cool rice dishes rapidly in shallow portions, ideally within 1 hour, and refrigerate at 4°C or colder for at most 24 hours. Do not cool in the heavy pot. Reheat only once to 74°C throughout. Follow earlier component deadlines.
Tips
- Base amounts make 2 catalogue shares, separate from skewer or small-cup yields. For 1 share halve every measured ingredient and process-water allowance; for 8 shares multiply by 4. Cup = 240 ml, tbsp = 15 ml, tsp = 5 ml. Keep cooking temperature, food thickness and vessel depth unchanged; use successive comparable-size batches, not multiplied cooking times. Timers are first checks, not guarantees. Follow actual cooking and allergen labels.
- Use supplier-labelled kingfish (Scomberomorus commerson), kept cold. Cooking does not remove histamine already formed through poor cold storage. Follow local species-specific advice; no low-mercury claim is made.
Common mistakes
- Do not rely on a fixed timer or surface colour alone. Keep the measured ingredient allocations and use the stated doneness checks.
Substitutions
- Use the specified ingredient states and equipment; reconcile another product before changing liquid or cooking method.

Reheating
Reheat only once to 74°C throughout, stirring where practical. Discard temperature-abused food; reheating cannot rescue it.
