Emirati Mahalla Zayed
Mahalla Zayed is an Emirati sweet crepe preparation.

Preparation: 15 min · Cooking: 25 min · Total: 55 min · 8 servings
Ingredients
- 1 tsp ground cardamom
- 1 pinch saffron threads
- 1 tbsp ghee, total allowance — Half for all pan-greasing, half for all finishing.
- 250 g ordinary wheat flour
- 250 ml drinking water
- 30 ml date syrup
- medium eggs — 2
- 0.5 tsp fine salt
Instructions
Prepare measured allowances
For eight crepes, reserve half the total 1 tbsp ghee for all pan-greasing and half for all finishing. At 32 crepes the total is 4 tbsp, split 2 + 2 tbsp; never repeat the whole allowance for each crepe.
Prepare equipment and handling
Do not taste raw flour/egg batter. Cook thin crepes on medium heat until both sides and centres are fully cooked and set; time or surface colour alone is not a guarantee. Refrigerate excess raw batter while cooking batches.
Whisk Batter
In a blender or deep bowl, combine the eggs, 30 ml date syrup, water, cardamom, saffron, and salt. Sift in the ordinary baking flour and blend thoroughly until a very thin, perfectly smooth, pourable crepe batter forms. (Do not taste raw batter). Rest covered for 15 minutes.
Check: Whisk Batter: 900 seconds
Cook Paper-Thin
Heat a wide flat griddle or non-stick frying pan over medium heat. Lightly grease the pan surface using a fraction of the pan-greasing ghee allocation. Pour a ladle of batter into the center, instantly swirling the pan to spread it paper-thin.
Flip & Verify
Cook for 1.5 to 2 minutes until the edges curl up and the underside turns golden brown. Flip and cook the second side for 30 seconds. Verify that the center of the crepe is completely set, dry, and cooked through.

Finish & Serve
Roll or fold the crepe onto a platter. Drizzle a small amount of the remaining finishing ghee allocation over the hot crepe. Repeat for all batter. Serve warm. Store cooked leftovers promptly in the refrigerator for up to 2 days.
Cool and store
Divide perishable leftovers promptly into small shallow containers and refrigerate within 1 hour at or below 4°C. Use within 2 days. Do not wait for a deep pot or full platter to reach room temperature.
Serve leftovers appropriately
If reheating, heat only the needed portion at most once to 74°C throughout. Stir or turn and thermometer-check several locations, including solid or dough centres. Reheating cannot repair improper storage; discard reheated leftovers.
Tips
- Selected ingredient amounts govern scaling. Numbers in the method describe the base batch: multiply allocations and piece counts in the same ratio. Use appropriately sized pots or multiple comparable pans/batches; timers do not multiply and never guarantee readiness.
Common mistakes
- Do not treat surface colour, a timer or a dry appearance as a guarantee of safe cooking. Follow the specific centre, texture and temperature checks.
Substitutions
- Follow the approved master ingredients and quantities; changes may require different liquid amounts or cooking methods. Optional garnishes may be omitted.
