Preparation: 20 min · Cooking: 1 hr 15 min · Total: 1 hr 50 min · 2 servings
Ingredients
- 200 g DRY short-grain white rice
- 200 g RAW boneless skinless chicken thigh, 3 cm pieces
- 240 g Fresh tomatoes, diced
- 0.5 tsp Ground dried black lime (loomi)
- 1 tbsp Commercial food-grade Omani Bezar blend; check label
- 150 g Peeled yellow onion, chopped
- 2 cloves Garlic cloves, minced
- 2 tbsp Tomato paste
- 15 ml Vegetable oil for sautéing
- 15 ml Ghee, total measured allocation
- 0.5 tsp Salt
- 800 ml Initial cooking water, produces broth in the pot
- 500 ml Hot-water reserve across both cooking stages, maximum (optional)
- 500 ml Rice-rinsing water, discarded
Instructions
Rinse rice and prepare chicken
Rinse rice with the separate 500 ml rinse water and drain. Cut chilled boneless chicken into 3 cm pieces on a separate raw-poultry board. Do not wash raw chicken; clean hands and tools before handling cooked food.
Soften the aromatics
Heat all 15 ml oil over medium heat. Soften onion and garlic from a 3-minute first check without burning. Add chicken, diced tomatoes and tomato paste; stir until evenly combined.
Aromatics first check: 180 seconds
Simmer chicken in the tomato broth
Add Bezar, loomi and salt with the initial 800 ml water. Bring to a boil, then simmer gently under a normal lid. Check first after 25 minutes; the broth comes from this pot, not an additional purchased stock.
Chicken simmer first check: 1500 seconds
Check chicken before adding rice
Probe the thickest chicken pieces away from the pot: require at least 74°C. Continue simmering if needed. Use only the measured shared hot-water reserve if coverage needs adjusting; do not add unlimited water.
Cook rice until very soft
Add drained rice and simmer very gently with the lid partly ajar from a 40-minute first check. Stir and scrape the bottom frequently throughout cooking. Rice must break down; use remaining measured reserve gradually if needed, never boil the porridge completely dry.
Rice softening first check: 2400 seconds
Mash gently off the heat
Place the pot on stable heatproof support off direct heat. Shred chicken with clean forks if needed, then hand-mash gently from a 5-minute first check. Avoid aggressive beating, hot splashes and powered blending.
Manual mash first check: 300 seconds
Finish the cohesive porridge
Check that rice is fully soft with no hard centre and chicken shreds are tender. Spoon into shallow plates and finish with all 15 ml measured ghee. Serve hot at a comfortable eating temperature.
Serve and store promptly
Cool rice dishes quickly in shallow portions, ideally within 1 hour; do not cool in the heavy cooking pot. Refrigerate at 4°C or colder for at most 24 hours. Reheat only once to 74°C throughout; earlier component deadlines still apply.
Tips
- Base amounts make 2 catalogue shares, separate from piece yields. For 1 share halve every measured food, garnish and process-water allowance; for 8 shares multiply by 4. Do not multiply cooking time, temperature, bread thickness or pot depth: use suitable comparable vessels or successive base-size batches. Cup 240 ml, tbsp 15 ml, tsp 5 ml. Follow actual product cooking and allergen labels. Never taste raw flour, dough or batter; fully cook all centres.
Common mistakes
- Do not rely on a fixed timer or surface colour alone; use the stated doneness checks and measured allocations.
Substitutions
- Use the specified ingredient states and equipment; reconcile a different product before altering its liquid or cooking method.
Storage

Reheating
Reheat leftovers only once to 74°C throughout, stirring where practical. Follow the earlier ingredient deadline; never reheat temperature-abused food to rescue it.
