Emirati Chicken Madrooba
Madrooba refers to the beating that brings grain and meat into a smooth porridge.

Preparation: 20 min · Cooking: 1 hr 30 min · Total: 1 hr 50 min · 6 servings
Ingredients
- 500 g boneless chicken thigh chunks
- 1 tsp ground turmeric
- 3 tbsp ghee, total allowance — Use part for the base; reserve the remainder for topping, never extra.
- 500 g rolled oats
- 2000 ml drinking water
- medium onions, finely chopped — 2
- medium tomatoes, diced — 2
- 2 tbsp tomato paste
- 1.5 tbsp Emirati Bezar spice blend
- 1.5 tsp fine salt
Instructions
Prepare oats, chicken and divided ghee
Measure dry oats separately from the 2 L cooking water. Divide the total 3 tbsp ghee between the base and topping before starting; finishing fat comes from that allowance, not an extra spoonful.
Cook Chicken Base
Heat part of the measured ghee in a large heavy pot. Sauté chopped onions until golden. Add tomatoes, tomato paste, Bezar, turmeric, and salt. Add the 500 g of unwashed raw boneless chicken chunks. Sauté to coat, then pour in 2 L water. Bring to a boil, cover, and simmer for 45 minutes.
Check several thick chicken pieces to at least 74°C; continue until tender. Oats are added in the next phase, not rice.

Stir in Oats
Slowly pour in the 500 g of rolled oats while stirring continuously to prevent lumps from forming. Lower heat to minimum.
Simmer & Monitor
Simmer gently for 30 to 40 minutes, opening the lid frequently to stir the bottom deeply, preventing any oat starch from catching or scorching on the base of the pot.

Verify & Beat
Insert a food thermometer into multiple chicken pieces as well as the porridge center; verify it reads at least 74°C (165°F). Remove from heat. Use a heavy wooden paddle or immersion blender to beat the mixture vigorously until chicken fibers shred completely into the oats, creating a thick, smooth, elastic porridge. Serve hot with the reserved remainder of the same total ghee. Follow standard 1-hour cooling and 24-hour leftover rules.
Serve the smooth porridge
Serve hot in shallow bowls with the reserved remainder of the total 3 tbsp ghee. For 24 servings the total is 12 tbsp; never add a second unmeasured topping allowance.
Cool and store
Divide perishable leftovers promptly into small shallow containers and refrigerate within 1 hour at or below 4°C. Use within 24 hours. Do not wait for a deep pot or full platter to reach room temperature.
Serve leftovers appropriately
If reheating, heat only the needed portion at most once to 74°C throughout. Stir or turn and thermometer-check several locations, including solid or dough centres. Reheating cannot repair improper storage; discard reheated leftovers.
Tips
- Selected ingredient amounts govern scaling. Numbers in the method describe the base batch: multiply allocations and piece counts in the same ratio. Use appropriately sized pots or multiple comparable pans/batches; timers do not multiply and never guarantee readiness.
Common mistakes
- Do not treat surface colour, a timer or a dry appearance as a guarantee of safe cooking. Follow the specific centre, texture and temperature checks.
Substitutions
- Follow the approved master ingredients and quantities; changes may require different liquid amounts or cooking methods. Optional garnishes may be omitted.
