Dhofari Chicken Madhbi — Home-Oven Adaptation
Salt-and-turmeric spatchcocked chicken roasted skin-up on an oven-rated rack.

Preparation: 20 min · Cooking: 1 hr · Total: 1 hr 40 min · 2 servings
Ingredients
- RAW whole chicken, approximately 1 kg; half batch uses a bone-in half bird — 1
- 1 tsp Salt
- 1 tsp Ground turmeric
Instructions
Spatchcock without washing
Keep chicken chilled and use a separate raw-poultry board with suitable shears. Remove the backbone and press the breastbone to flatten the bird. Do not wash raw chicken; clean hands and tools before touching cooked food.
Season and plan batch size
Rub all sides with measured salt and turmeric. Base is one approximately 1 kg bird; half is a bone-in half bird of approximately 500 g, not a promise of exact weight. Fourfold uses 4 birds and fourfold seasonings, with enough oven space or successive batches.
Preheat oven and arrange rack
Preheat a conventional oven to 220°C. Use an oven-rated rack over a drip tray and place chicken skin-up with clearance. This is a home-oven adaptation: no collected stones, charcoal, open fire or unlisted oil.
Roast skin-up
Roast skin-up at 220°C with a first check at 45 minutes. Do not flip a hot whole bird unnecessarily or use the stone-cooking schedule. Check half birds earlier, not by blindly halving minutes; do not overlap birds in larger batches.
Chicken roasting first check: 2700 seconds
Check breast and thigh separately
Use a clean thermometer in both the thickest breast and innermost thigh away from bone: each must reach at least 74°C. Continue in short intervals if either is cooler, checking again from 5 minutes. Lower heat or protect browning skin if needed without treating colour as proof.
Further roasting check if needed: 300 seconds
Rest before carving
Transfer to a clean platter only after both core checks pass. Rest for 3 minutes before carving with clean utensils. Keep raw-poultry boards and juices away from the cooked chicken.
Chicken serving rest: 180 seconds
Serve the measured chicken
Serve the roasted chicken without unmeasured garlic sauce or rice. Those are separate accompaniments, not part of this yield. If rice is served separately, cool it rapidly and apply its 24-hour refrigerated storage limit.
Serve and store promptly
Refrigerate promptly in shallow containers at 4°C or colder for at most 2 days, or an earlier ingredient/package deadline. Do not wait for complete counter cooling. Assembly does not reset older component storage times.
Tips
- Base amounts make 2 catalogue shares, separate from piece yields. For 1 share halve every measured food, garnish and process-water allowance; for 8 shares multiply by 4. Do not multiply cooking time, temperature, bread thickness or pot depth: use suitable comparable vessels or successive base-size batches. Cup 240 ml, tbsp 15 ml, tsp 5 ml. Follow actual product cooking and allergen labels. Never taste raw flour, dough or batter; fully cook all centres.
Common mistakes
- Do not rely on a fixed timer or surface colour alone; use the stated doneness checks and measured allocations.
Substitutions
- Use the specified ingredient states and equipment; reconcile a different product before altering its liquid or cooking method.
Storage
Refrigerate promptly in shallow containers at 4°C or colder for at most 2 days, or an earlier ingredient/package deadline. Do not wait for complete counter cooling. Assembly does not reset older component storage times.
Reheating
Reheat leftovers only once to 74°C throughout, stirring where practical. Follow the earlier ingredient deadline; never reheat temperature-abused food to rescue it.
