Dhofari Camel Madhbi — Home-Oven Adaptation
Salted camel slices roasted on an oven-rated rack, not collected stones or open fire.

Preparation: 15 min · Cooking: 30 min · Total: 1 hr 5 min · 2 servings
Ingredients
- 500 g RAW food-grade boneless camel, 2 cm slices
- 10 g Coarse sea salt
Instructions
Prepare the specified cut
Keep food-grade boneless camel chilled and cut into wide 2 cm slices. Season all sides with the measured coarse salt. Follow any stricter supplier cooking instructions; this is not a species-specific preservation process.
Preheat a conventional oven
Preheat the conventional oven to 220°C. Use an oven-rated rack over a drip tray with safe oven clearance. This is an openly labelled household adaptation, not a promise of traditional stone-cooked smoke.
Arrange a single layer
Arrange meat in one layer with spaces on the rack. Use sufficient comparable trays or successive base-size batches at fourfold scale. Do not add collected stones, charcoal, unlisted oil or ingredients intended to produce flare-ups.
Roast and turn with long tongs
Roast at 220°C and check the first side from 10 minutes. Turn with long-handled tongs, keeping away from hot drippings. Do not wipe hot surfaces with a cloth or use a wire grill brush.
First roasting check: 600 seconds
Check the second side
Continue roasting and check again from 8 minutes after turning. Thickness, oven capacity and the cut affect completion, so a browned crust or fixed timer is not enough. Continue as needed without stacking or deepening the meat layer.
Second roasting check: 480 seconds
Verify the core with a thermometer
Check thickest centres reach 75°C and remain there for 30 seconds, or meet stricter supplier instructions. This is a selected general household cooking target, not a camel-specific official minimum. Continue as needed for tenderness; reconcile a cut unsuitable for roasting rather than promise a fixed result.
Camel core hold at 75°C: 30 seconds
Rest on a clean platter
Rest on a clean platter for 3 minutes after meeting the core target. Serve without unlisted honey, bread or rice quantities. Keep later batches separate and use comparable meat thickness rather than multiplying cooking time.
Meat rest: 180 seconds
Serve and store promptly
Refrigerate promptly in shallow containers at 4°C or colder for at most 2 days, or an earlier ingredient/package deadline. Do not wait for complete counter cooling. Assembly does not reset older component storage times.
Tips
- Base amounts make 2 catalogue shares, separate from piece yields. For 1 share halve every measured food, garnish and process-water allowance; for 8 shares multiply by 4. Do not multiply cooking time, temperature, bread thickness or pot depth: use suitable comparable vessels or successive base-size batches. Cup 240 ml, tbsp 15 ml, tsp 5 ml. Follow actual product cooking and allergen labels. Never taste raw flour, dough or batter; fully cook all centres.
Common mistakes
- Do not rely on a fixed timer or surface colour alone; use the stated doneness checks and measured allocations.
Substitutions
- Use the specified ingredient states and equipment; reconcile a different product before altering its liquid or cooking method.
Storage
Refrigerate promptly in shallow containers at 4°C or colder for at most 2 days, or an earlier ingredient/package deadline. Do not wait for complete counter cooling. Assembly does not reset older component storage times.
Reheating
Reheat leftovers only once to 74°C throughout, stirring where practical. Follow the earlier ingredient deadline; never reheat temperature-abused food to rescue it.
