Preparation: 30 min · Cooking: 45 min · Total: 1 hr 15 min · 4 servings
Ingredients
- 1000 g raw peeled, deveined shrimp
- 600 g dry basmati rice
- medium tomatoes, diced — 2
- dried black limes (loomi), pierced — 2
- 1 pinch saffron threads
- 1500 ml initial water for spice broth — Produces the rice broth; reserve 1170 ml, not a second stock purchase.
- 30 ml warm water for saffron
- medium onions, finely chopped — 2
- garlic cloves, minced — 4
- 1 tbsp fresh ginger, grated
- 1.5 tbsp Emirati Bezar spice blend
- 1 tsp ground turmeric
- 1.5 tsp fine salt
- 3 tbsp ghee, total allowance
- conditional boiling-water top-up (optional)
- separate rice rinsing/soaking water, discarded
Instructions
Prepare measured allowances
Rinse and soak the dry-weighed rice according to its package, then drain completely and discard that water. Infuse saffron in its separate 30 ml water. Keep shrimp refrigerated at or below 4°C until added directly to the boiling rice broth; no partial cooking or holding.
Build Broth Base
Heat ghee in a large pot. Sauté onions, garlic, and ginger until golden. Stir in tomatoes, Bezar, turmeric, salt, and pierced loomi. Pour in initial water and simmer for 20 minutes to extract spice flavors.

Measure & Combine
Strain the seasoned broth. Measure exactly 1170 ml of broth back into the pot, topping up with conditional boiling water if short. Stir in the 30 ml saffron water to hit your 1,200 ml liquid total. Bring to a rolling boil.
Uninterrupted Cooking
Add the 600 g of soaked, drained basmati rice and immediately drop in the 1 kg of refrigerated raw shrimp. Cook uncovered on high heat, stirring gently, until the rice absorbs the liquid below the surface.
Steam & Verify
Reduce heat to lowest setting. Cover with an ordinary tight lid. Steam for 20 minutes. Verify with a thermometer that the shrimp center reaches at least 63°C (145°F) with flesh completely pearly and opaque. Cool leftovers in shallow containers, refrigerate within 1 hour at or below 4°C, consume within 24 hours, and reheat to 74°C at most once.

Cool and store
Divide perishable leftovers promptly into small shallow containers and refrigerate within 1 hour at or below 4°C. Use within 24 hours. Do not wait for a deep pot or full platter to reach room temperature.
Serve leftovers appropriately
If reheating, heat only the needed portion at most once to 74°C throughout. Stir or turn and thermometer-check several locations, including solid or dough centres. Reheating cannot repair improper storage; discard reheated leftovers.
Tips
- Selected ingredient amounts govern scaling. Numbers in the method describe the base batch: multiply allocations and piece counts in the same ratio. Use appropriately sized pots or multiple comparable pans/batches; timers do not multiply and never guarantee readiness.
Common mistakes
- Do not treat surface colour, a timer or a dry appearance as a guarantee of safe cooking. Follow the specific centre, texture and temperature checks.
Substitutions
- Follow the approved master ingredients and quantities; changes may require different liquid amounts or cooking methods. Optional garnishes may be omitted.
