Instructions

  1. Beat the yeast batter

Mix yeast, sugar and measured warm water, following the yeast label’s liquid-temperature directions. Add flour and cornstarch and beat with a sturdy spoon from a 3-minute first check until elastic. Never taste raw flour, dough or batter.

  2. Let the batter rise covered

Cover and let rise from a 45-minute first check until expanded and bubbly. Base yield is 20 equal small puffs; half makes 10 and fourfold makes 80. Keep the same puff size rather than enlarging them for larger serving counts.

    Covered batter rise: 2700 seconds

  3. Measure frying and spoon oil separately

Separate 10 ml clean oil for greasing a dry spoon; the remaining 990 ml is the frying allowance. Use a dry deep stable fryer or pot within manufacturer maximum fill and with generous expansion headspace. Fourfold oil is an allowance for suitable successive batches, never a direction to pour 4 litres into the base pot.

  4. Heat oil with a thermometer

Heat frying oil toward 170°C, checking temperature from 5 minutes rather than relying on time. Do not enforce a fixed 5 cm depth in every vessel. Keep water away, never leave oil unattended and never put water on an oil fire.

Oil temperature first check: 300 seconds

  5. Portion small equal puffs

Grease a dry metal spoon only from the separate clean spoon oil. Divide the risen batter evenly into 20 base portions and lower small batches close to the oil surface. Do not dip utensils in water near hot oil or overcrowd the fryer.

  6. Fry and turn carefully

Fry small batches at 170°C, turning with a long-handled slotted spoon from a 5-minute first check until evenly golden. Maintain safe oil level and temperature between batches. A timer or brown exterior alone cannot confirm cooked centres.

Puff frying first check: 300 seconds

  7. Test a centre and finish

Remove a test puff and let it become safe to open: the centre must be airy and fully cooked without wet batter. If dark outside and raw inside, adjust heat or portion size and continue cooking appropriately. Drain cooked puffs, drizzle all 60 ml date molasses across the batch and add the measured optional ready-to-eat sesame.

  8. Serve and store promptly

Refrigerate promptly in shallow containers at 4°C or colder for at most 2 days, or an earlier ingredient/package deadline. Do not wait for complete counter cooling. Assembly does not reset older component storage times.

Storage

Refrigerate promptly in shallow containers at 4°C or colder for at most 2 days, or an earlier ingredient/package deadline. Do not wait for complete counter cooling. Assembly does not reset older component storage times.

Reheating

Reheat leftovers only once to 74°C throughout, stirring where practical. Follow the earlier ingredient deadline; never reheat temperature-abused food to rescue it.
