Preparation: 20 min · Cooking: 20 min · Total: 1 hr 40 min · 8 servings
Ingredients
- 250 g ordinary wheat flour
- 5 g instant yeast
- date syrup
- toasted sesame seeds, optional garnish (optional)
- 0.5 tsp ground cardamom
- 200 ml drinking water — Total: 170 ml direct + 30 ml saffron infusion.
- 12 g granulated sugar
- 10 g cornstarch
- 1 pinch saffron threads
- 0.25 tsp fine salt
- vegetable oil for deep-frying and spoon greasing
Instructions
Prepare measured allowances
For the base batch, infuse saffron in 30 ml of the 200 ml water; 170 ml remains for mixing. Divide all batter into about 24 small portions; at fourfold, use 120 + 680 ml water and about 96 portions.
Prepare equipment and handling
Raw flour and eggs may contain pathogens. Never taste raw dough or batter; prevent cross-contamination. Use a stable deep pot no more than half full, maintain oil at 170–175°C, use a greased spoon and keep hands and water away from hot oil. A test ball must have cooked, set inner crumb; colour and time alone are not proof.
Prepare the frying station
Set out a slotted spoon, a thermometer and a draining plate before heating the oil. Keep the deep pot stable, at most half full; use 170–175°C oil and small batches, never hands near the oil.
Mix Batter
Whisk ordinary flour, yeast, sugar, cornstarch, cardamom, and salt. Pour in direct water and saffron infusion. Whisk vigorously to form a thick, sticky batter. (Do not taste raw batter). Cover; let rise in a warm spot for 45–60 minutes until doubled.

Shape & Fry
Heat 5 cm of vegetable oil to 170–175°C. Drop dough portions into the oil using a greased spoon, keeping hands away from hot oil. Stir continuously with a metal slotted spoon to roll the spheres uniformly. Fry for 4–5 minutes until deep golden.

Verify & Serve
Do not rely on color alone; verify doneness by carefully cutting open a test ball to ensure the center dough is fully set and light. Drain, drench with date syrup, and serve warm. Promptly cool leftovers and store at or below 4°C for up to 2 days.
Cool and store
Divide perishable leftovers promptly into small shallow containers and refrigerate within 1 hour at or below 4°C. Use within 2 days. Do not wait for a deep pot or full platter to reach room temperature.
Serve leftovers appropriately
If reheating, heat only the needed portion at most once to 74°C throughout. Stir or turn and thermometer-check several locations, including solid or dough centres. Reheating cannot repair improper storage; discard reheated leftovers.
Tips
- Selected ingredient amounts govern scaling. Numbers in the method describe the base batch: multiply allocations and piece counts in the same ratio. Use appropriately sized pots or multiple comparable pans/batches; timers do not multiply and never guarantee readiness.
Common mistakes
- Do not treat surface colour, a timer or a dry appearance as a guarantee of safe cooking. Follow the specific centre, texture and temperature checks.
Substitutions
- Follow the approved master ingredients and quantities; changes may require different liquid amounts or cooking methods. Optional garnishes may be omitted.
