Instructions

  1. Prepare the mould

Prepare 1 small food-safe metal terrine mould rated for bain-marie cooking. Use a cooking-rated parchment liner if required, no extra grease. Put it on a rack in a suitable covered pot; ordinary cling film is not used.

  2. Blend the cold paste

Keep meat, eggs, cheese and tools cold. Choose either 300 g chicken or 300 g beef; do not wash raw meat. Pulse with four eggs, 60 g cheese, 2 tbsp flour, 1 tbsp cornstarch and 1.5 tbsp blend until smooth, scraping as needed. Avoid five continuous warming minutes; do not taste raw paste.

  3. Start the water bath

Transfer immediately to the mould and loosely cover with foil. Bring bath water around half mould height, below its rim. Maintain a gentle simmer with the pot covered; replenish boiling water as needed and keep bath water out of the paste. Clean raw-meat tools before touching cooked food.

  4. Check the hot core

Begin checking near one hour while the loaf is still cooking hot. Probe several central and thick points with a clean thermometer; all must reach at least 74°C before removal for cooling. Firmness and colour do not prove doneness. Continue cooking if any reading is low.

Check after 60 minutes: 3600 seconds

  5. Use equivalent small loaves

Use 74°C for the chicken option and as the selected conservative target for the beef option. Fourfold makes four equivalent small loaves, not one thick loaf; use suitable pots or batches and verify every loaf while hot. This is not a commercially validated pasteurization process.

  6. Cool promptly in shallow portions

Remove carefully and stand only briefly as needed for handling. Unmould with clean tools, cut into smaller portions and place in shallow containers for prompt refrigeration within one hour at ≤4°C. Do not cool a whole dense loaf fully on the counter.

  7. Chill fully, then slice

Check after two hours of refrigerated setting, continuing to chill until ≤4°C throughout. Two hours is not a guaranteed cooling time; monitor the centre rather than leaving it warm. Only then slice thinly with clean tools and divide among eight split Fino rolls.

  8. Serve cold

Serve cold and keep refrigerated at ≤4°C. Use within 24 hours from cooking, including chilling time. Do not freeze under this recipe’s quality preference; this is not a general claim that freezing is unsafe. No reheating step is required.
