Preparation: 25 min · Cooking: 45 min · Total: 1 hr 40 min · 2 servings
Ingredients
- 250 g DRY basmati rice
- 250 g RAW shell-on lobster tails, thawed refrigerated if frozen
- 50 g Canned chickpeas, drained and rinsed weight
- 20 g Raisins
- 150 g RAW peeled yellow onion, sliced
- 2 tbsp Commercial food-grade Qabooli spice blend; check label
- 30 ml Ghee, total measured allocation
- Small cinnamon stick, approximately 5 cm — 1
- Whole cardamom pods — 3
- 0.5 tsp Salt
- 1500 ml Initial lobster-poaching water
- 450 ml STRAINED RECOVERED poaching broth for rice, not extra water
- 100 ml Shared hot-water broth/rice reserve, maximum (optional)
- 500 ml Rice-rinsing water, discarded
- 750 ml Cold rice-soaking water, discarded
- 250 ml Chickpea-rinsing water, discarded
Instructions
Rinse and soak rice
Rinse rice with the separate 500 ml rinse water and discard it. Soak in the separate 750 ml cold water for 20 minutes under refrigeration, then drain. Rinse canned chickpeas with their 250 ml water and drain to the specified weight.
Refrigerated rice soak: 1200 seconds
Start the spiced poaching water
Bring the 1500 ml initial poaching water to a rolling boil with cinnamon, whole cardamom and salt. Keep thawed raw tails chilled until needed and separate their tools from cooked food. For a half batch, divide crushed cardamom seeds evenly if needed rather than rounding the amount.
Poach and check lobster flesh
Lower tails carefully into boiling water and check from 8 minutes. Probe thickest flesh to the selected higher household target of 74°C with pearly opaque flesh; shell colour alone is insufficient. Remove with clean tongs and hold at 60°C or above during the short rice cooking, or coordinate finishing without a counter hold.
Lobster poaching first check: 480 seconds
Measure recovered rice broth
Strain the hot poaching liquid safely and measure exactly 450 ml for rice. Remove whole-spice pieces and discard excess liquid. Use only the listed shared 100 ml hot-water reserve if needed to recover that amount or later soften rice; recovered broth is not additional water.
Make the onion topping
Soften sliced onion in 20 ml of the total 30 ml ghee over medium-low heat until golden, not burned. Add Qabooli blend, drained chickpeas and raisins, then cook from a 3-minute first check. Keep topping hot; reserve the remaining 10 ml ghee for the lobster sear.
Topping first check: 180 seconds
Cook rice in measured broth
Bring the measured broth to a boil with drained rice, then cover with a normal fitted lid and cook on low. Check first after 15 minutes until rice is tender, using only remaining measured reserve if needed. Rest covered for 5 minutes; do not use an arbitrary liquid-depth rule.
Rice cooking first check: 900 seconds
Covered rice rest: 300 seconds
Sear tails and assemble
Using clean shears and utensils, split safely manageable cooked tails. Briefly sear exposed meat in the remaining 10 ml ghee, checking from 2 minutes. Arrange over hot rice with the onion-chickpea-raisin topping and serve immediately.
Lobster sear first check: 120 seconds
Serve and store promptly
Cool rice dishes quickly in shallow portions, ideally within 1 hour; do not cool in the heavy cooking pot. Refrigerate at 4°C or colder for at most 24 hours. Reheat only once to 74°C throughout; earlier component deadlines still apply.
Tips
- Base amounts make 2 catalogue shares, separate from piece yields. For 1 share halve every measured food, garnish and process-water allowance; for 8 shares multiply by 4. Do not multiply cooking time, temperature, bread thickness or pot depth: use suitable comparable vessels or successive base-size batches. Cup 240 ml, tbsp 15 ml, tsp 5 ml. Follow actual product cooking and allergen labels. Never taste raw flour, dough or batter; fully cook all centres.
Common mistakes
- Do not rely on a fixed timer or surface colour alone; use the stated doneness checks and measured allocations.
Substitutions
- Use the specified ingredient states and equipment; reconcile a different product before altering its liquid or cooking method.
