Preparation: 30 min · Cooking: 25 min · Total: 1 hr 55 min · 8 servings
Ingredients
- 250 g ordinary wheat flour
- 5 g instant yeast
- date syrup for finishing, to taste
- sesame seeds (optional) — Optional garnish from the original request.
- 170 ml warm water added directly — Part of 200 ml total dough water, not 200 ml plus an infusion.
- 30 ml warm water for saffron infusion
- 12 g sugar
- 10 g cornstarch
- 1 pinch saffron threads
- 0.5 tsp ground cardamom
- 0.25 tsp salt
- pasteurized cream-cheese triangles — 6 — Divide each triangle into four filling pieces: 24 pieces base, 96 fourfold. Brand weight varies; no gram equivalent is assumed.
- vegetable oil for frying, as needed
- extra oil for lightly coating hands or tools
Instructions
Infuse saffron within the total water
Use 200 ml total warm water at base yield: 170 ml direct plus 30 ml for saffron, not 230 ml. Fourfold is 680 + 120 = 800 ml. Infuse the saffron in its separate warm water until coloured; keep cheese chilled.
Mix Batter
In a bowl, whisk flour, yeast, 12 g sugar, 10 g cornstarch, cardamom, and salt. Pour in the 170 ml direct water and the 30 ml saffron infusion. Whisk vigorously to form a thick, sticky, elastic batter. (Do not taste raw batter). Cover; let rise in a warm spot for 45–60 minutes until frothy and doubled.
Check doubled batter after 45 minutes: 2700 seconds
Stuff Core
Cut each cheese triangle into four equal filling pieces: twenty-four total at base yield, ninety-six fourfold. Lightly oil clean hands or tools, keeping away from the stove. Divide the whole sticky batter into a matching number of small portions, seal one cheese piece completely inside each and keep unfried portions cool while working.
Heat oil with a thermometer
Use a deep stable pot with room above about 5 cm oil; never fill more than halfway. Heat oil to 170–175°C and monitor with a frying thermometer. Keep water away and use a slotted spoon to lower small batches gently; never put hands near hot oil.
Fry & Verify
Heat 5 cm of vegetable oil to 170–175°C in a deep pot. Fry in small batches. Stir continuously with a metal slotted spoon to roll the balls uniformly. Fry for 4–5 minutes until a deep copper-golden color. Verify doneness by carefully cutting open a test ball to ensure the dough layer surrounding the cheese filling is completely set, light, and cooked through, not raw or doughy.
Check filled bites after four minutes: 240 seconds
Drench
Drain on paper towels. Immediately drench generously with warm date syrup (dibbs). Serve warm.
Serve the approximate bite count
The base makes about twenty-four bites for eight servings, about three each; fourfold about ninety-six for thirty-two servings. Divide all batter and filling together into the selected count rather than enforcing golf-ball size. Sprinkle optional sesame if selected and serve warm.
Chill leftovers promptly
Divide leftovers promptly into small shallow containers and refrigerate within 1 hour at or below 4°C. Use within 2 days. Do not wait for a whole deep pot or tray to reach room temperature.
Tips
- Selected ingredient amounts govern scaling; numbers in the method describe the base batch. Use more comparable pans or cooking batches for large yields, not one deeper pan or multiplied timers. Timers remind you to check readiness and do not certify it.
Common mistakes
- Do not treat a timer or surface colour as proof of cooked centres; inspect the stated texture and temperature where applicable.
Substitutions
- Keep the approved master ingredients and allocations; alternatives may need a different method or quantity. Optional garnishes may be omitted.
Storage
Divide leftovers promptly into small shallow containers and refrigerate within 1 hour at or below 4°C. Use within 2 days. Do not wait for a whole deep pot or tray to reach room temperature.
Reheating
If reheating, heat only the portion needed, at most once, to 74°C throughout, including solid and bread centres. Stir or turn and thermometer-check several places. Discard reheated leftovers; reheating cannot repair improper storage.
