Instructions
Prepare vegetables and equal bread layers
Prepare 250 g each potato, carrot, zucchini and pumpkin at base yield; fourfold each is 1000 g. Separate the Regag into two equal groups: two lower and two upper sheets, eight and eight fourfold. Keep raw lamb chilled during prep.
Sauté & Simmer Lamb
Heat ghee in a deep pot. Sauté chopped onions, garlic, and ginger until golden. Stir in chopped tomatoes, 50 g tomato paste, Bezar, turmeric, salt, and pierced loomi. Add unwashed raw lamb chunks. Pour in 2 L initial water. Bring to a boil, skim foam, cover, and simmer for 1 to 1.5 hours until lamb is tender. Start sautéing over medium heat; lower the heat for the later gentle simmer.

Add Vegetables
Add potatoes, carrots, pumpkin, and zucchini. Cover and simmer for 20 to 25 minutes until soft. Verify with a food thermometer that the lamb core reaches at least 71°C (160°F) and vegetables are tender. Add boiling water only if needed to keep vegetables covered. Confirm every vegetable is tender; keep hard vegetables below the softer ones if layering them.

Layer Assembly
In a wide serving bowl, break the 2 lower Regag sheets into large pieces. Pour hot stew broth generously over the bread until fully saturated and soft. Arrange the cooked lamb chunks and vegetables on top.
Finish
Break the remaining upper Regag sheets over the meat and vegetables, two at base yield or eight at fourfold yield. Ladle hot broth over all upper bread until completely softened. Add optional fresh coriander if desired and serve immediately.
Serve promptly and watch for bones
Serve the hot meal promptly. Warn diners about remaining lamb bones and remove whole loomi or whole spices before plating. Keep cooked food hot above 63°C if a short wait is unavoidable, and cold garnishes refrigerated until serving.
Cool each component without delay
Portion leftover soaked bread, meat and vegetables promptly into shallow containers. Apply the cooling limit from cooking, not a fresh hour after assembly. Do not leave a large serving bowl standing while the entire batch cools.
Cool rice and stew leftovers safely
Divide leftovers promptly into small shallow containers and refrigerate within 1 hour at or below 4°C. Use within 24 hours. Do not wait for a whole deep pot or tray to reach room temperature.
Tips
- Selected ingredient amounts govern scaling; numbers in the method describe the base batch. Use more comparable pans or cooking batches for large yields, not one deeper pan or multiplied timers. Timers remind you to check readiness and do not certify it.
Common mistakes
- Do not treat a timer or surface colour as proof of cooked centres; inspect the stated texture and temperature where applicable.
Substitutions
- Keep the approved master ingredients and allocations; alternatives may need a different method or quantity. Optional garnishes may be omitted.
Storage
Divide leftovers promptly into small shallow containers and refrigerate within 1 hour at or below 4°C. Use within 24 hours. Do not wait for a whole deep pot or tray to reach room temperature.
Reheating
If reheating, heat only the portion needed, at most once, to 74°C throughout, including solid and bread centres. Stir or turn and thermometer-check several places. Discard reheated leftovers; reheating cannot repair improper storage.
