Preparation: 30 min · Cooking: 2 hr 30 min · Total: 3 hr · 4 servings
Ingredients
- 1000 g raw bone-in lamb shoulder chunks
- 600 g dry basmati rice
- whole dried black lime, pierced — 2
- medium tomatoes, chopped — 2
- onions, chopped — 2
- 4 cloves garlic cloves, minced
- 1 tbsp fresh ginger, minced
- 1.5 tbsp Emirati Bezar spice blend
- 1 tsp ground turmeric
- 1.5 tsp salt
- 1 tbsp tomato paste
- 2000 ml fresh cooking water
- 1170 ml strained lamb broth for rice, derived — Derived from the initial lamb pot, not additional purchased stock. With 30 ml saffron water totals 1200 ml base; fourfold 4680 + 120 = 4800 ml.
- 1 pinch saffron threads
- 30 ml warm water for saffron
- 4 tbsp ghee — Three quarters cooking, one quarter finishing: 3 + 1 tbsp base, 12 + 4 tbsp fourfold.
- additional boiling water, only if needed (optional) — Only if needed for coverage or a shortfall in measured derived broth.
- separate cold soaking water, discarded
Instructions
Prepare rice, saffron and divided fat
Rinse and soak dry-weighed rice according to the package, then drain and discard that water. Infuse saffron in its measured warm water. Reserve one quarter of total ghee for finishing, three quarters for cooking; broth is derived later, not a second stock purchase. The base rice liquid is 1170 ml derived broth plus 30 ml saffron water; fourfold is 4680 + 120 ml.
Sauté Base
Heat cooking ghee allocation in a large pot. Sauté chopped onions, ginger, and garlic until golden. Stir in chopped tomatoes, tomato paste, Bezar, turmeric, pierced loomi, and salt. Start sautéing over medium heat; lower the heat for the later gentle simmer.
Simmer Lamb
Toss in unwashed raw lamb chunks. Pour in initial water. Bring to a boil, skim surface foam, cover, and simmer gently for 1.5–2 hours until lamb is tender and reaches a verified temperature of at least 71°C (160°F). Remove lamb.

Measure Liquid
Strain the broth through a fine sieve. Measure out the required strained broth allocation into the pot (top up with conditional boiling water if short). Stir in the saffron water. Measure 1170 ml broth before adding 30 ml saffron water at base yield, or 4680 + 120 ml at fourfold yield.
Cook Rice
Bring the 1.2 L (4.8 L for large) liquid to a rolling boil. Add soaked, drained rice. Cook uncovered on high until rice grains absorb most liquid.
Steam
Reduce heat to lowest setting. Lay lamb back over rice, drizzle with finishing ghee allocation, cover with an ordinary close-fitting lid (not airtight), and steam for 20–30 minutes. Cool rapidly in shallow containers, refrigerate within 1 hour at or below 4°C, use within 24 hours, and reheat to 74°C at most once. Verify the rice is tender with no hard centre. Use a normal lid, not foil pressure-sealing. Keep lamb hot above 63°C during the brief broth/rice transfer.
Check rice after 20 minutes: 1200 seconds
Serve promptly and watch for bones
Serve the hot meal promptly. Warn diners about remaining lamb bones and remove whole loomi or whole spices before plating. Keep cooked food hot above 63°C if a short wait is unavoidable, and cold garnishes refrigerated until serving.
Cool rice and stew leftovers safely
Divide leftovers promptly into small shallow containers and refrigerate within 1 hour at or below 4°C. Use within 24 hours. Do not wait for a whole deep pot or tray to reach room temperature.
Tips
- Selected ingredient amounts govern scaling; numbers in the method describe the base batch. Use more comparable pans or cooking batches for large yields, not one deeper pan or multiplied timers. Timers remind you to check readiness and do not certify it.
Common mistakes
- Do not treat a timer or surface colour as proof of cooked centres; inspect the stated texture and temperature where applicable.
Substitutions
- Keep the approved master ingredients and allocations; alternatives may need a different method or quantity. Optional garnishes may be omitted.
Storage
Divide leftovers promptly into small shallow containers and refrigerate within 1 hour at or below 4°C. Use within 24 hours. Do not wait for a whole deep pot or tray to reach room temperature.
Reheating
If reheating, heat only the portion needed, at most once, to 74°C throughout, including solid and bread centres. Stir or turn and thermometer-check several places. Discard reheated leftovers; reheating cannot repair improper storage.
About this recipe
Machboos pairs meat and rice with Gulf aromatics. In this lamb household master, measured cooking broth and saffron water flavour the rice before a final covered steam.
